Mon gros problème avec les oies et les canards c’est le plumage. As-tu plumer la bête avant ou encore après avoir enlevé les poitrines? Avant probablement. C’est quand même toute une job, le plumage.

Pour le plumage j'y vais a sec, à l'eau chaude je n'y crois pas. 1 c'est pas mouillable un canard, et 2 ca laisse plein de petits picos de plumes dans la peau. Souvent je fais juste les poitrines à sec, avant de décarcassé le reste. J'ai une video la dessus, postée le 21 novembre 2021.
Yeah that's it is. To curb that you could add 1/2 part sugar to your mix. Like salmon gravlax. And reduce the salting period a bit. But if you reduce absorbed salt, you increase moisture and it will reduce the shelf life.

Yeah I use brown sugar a lot, unrefined. Healthier but... Still sugar 🤣
