    Made pastrami out of so many geese from this past season. I didn't use this recipe but did use a recipe that calls for a brine for the breasts to sit in for about 5 days. Makes a great snack while hunting, or just something to take to work as lunch.

    Dude, so good. Made this recipe twice now, if ya over cook it a tad and it ends up like jerky, it’s equally if not better. Mind blown

    If you've not read it yet, check out Hank Shaw's book "Duck Duck Goose". It's the best game recipe cookbook out there in my opinion. It's slightly more elevated cooking (he's a professional chef) but the recipes are top notch!

    I have a somewhat similar version I've been doing for years. If we ever get a chance to meet, I'll give you some to try. I've been thinking about doing more videos too.

    Omg, these were delicious! My friend who hunts all the time, did this and brought me a piece of this over today......holy shit! I couldn't eat it fast enough! Next time I will try it with some spicy mustard!

    Just a question. Why would you put a rub on the goose breasts if you already have it cured for pastrami?? Personal choice? It's not a brisket.

    You need to steam it after you smoke it, otherwise it looks great!

      you can use anything. the recipe says any fruitwood, but it really doesnt seem to have large effect. i've used apple, cherry and hickory
