There are definitely "monsters" but they're much less common than somewhere like Faerun. In Stormlight, the "big monsters" are chasmfiends, which are only really found in one location. For the most part, especially in the later Stormlight books, it becomes a "mage vs mage" situation like you said.
As the former comment said, it's primarily Chasmfiends in terms of monsters. That said, there is certainly room for other monsters. There's adversary cards for Axehounds (basically wolves), Chulls (large beasts of burden, usually peaceful but they have an adversary page), and Cremlings (essentially think of a swarm of ants attacking you, may theoretically be a sentient person that is made up of cremlings). There's also likely room for spren enemies (in the Cognitive Realm, a lot of the more simple spren, the ones that don't give you magic powers, they manifest differently, and some of them will likely try to kill you). There's also assuredly Thunderclasts, giant spindly rock monsters that act as you would expect a giant spindly rock monster to act. Most of the time, though, adversaries are human, though even in those cases they can become very monstrous. People can become affected by the Thrill and become Thrill Berserkers, someone can b put under the influence of the Unmade Yelig-Nar and turn into a big crystal monster, etc.
