Roasted Rainbow Carrots with Whipped Feta (20 minutes!)

They taste as good as they look🌈🥕
What you need:
1 1/2 lbs rainbow carrots peeled (I used 3 bunches store-bought, which is about15-17 carrots)
2 Tbsp olive oil
1 tsp paprika
1 tsp kosher salt
4 cloves minced garlic
2 tsp honey or maple syrup
2 tsp fresh thyme leaves plus more to garnish
Parsley to garnish
Whipped Feta (optional): 8 oz feta cheese, 1/4 cup plain Greek yogurt, 2 Tbsp milk (plus more as needed)
