Wonderful episode. I really enjoy watching these. I'm a Steelheader from Ontario, Canada. I have a similar way of baking trout and salmon. I had to stop using onions and garlic after I developed allergies to them but now I drizzle some olive oil and butter on the fish and I will either spread mayo on the fish before baking or I will spread mayo when the fish is finished, some times a little before and after. Great episode. Cheers
