    Love your channel... one tip though is to hold off adding oil until at least one min after mixing flour with water. The oil is competing with the water to hydrate the flour. That's why the dough is sticky after it's proofed. You'll get more consistent results waiting to add the oil. Other than that I've learned a lot from you my friend

    I didn't have any feta so I used English Stilton blue cheese, added some chunky applesauce for sweetness, fried them up and gave them some sesame seeds and honey and Oh... My... God... !! You can serve them like this for dessert. Thank you for the recipe, Akis! So easy...!

    We happened to come across this cooking channel yesterday, where this recipe was being prepared. We could not resist trying it right away. I promise you, this is SO delicious! It took us right back to Greece. We will definitely make this again when friends drop by. The next recipe we want to try is the Greek beef and orso casserole. We can't wait!

    Does it matter what kind of vinegar in the dough? Will it work with white wine vinegar, or apple cider vinegar, or balsamic to give it a little more flavor?

      Vinegar; it's common practice for Greek moms and grandmas to use vinegar when they make dough for savoury pies (spinach-pie, cheese-pie, leek-pie etc.) as it makes the dough fluffier and crunchier...

    If I'm serving this up to my kids for breakfast, what would be a nice side to serve it with (for a complete breakfast)? A mini salad of cucumbers, tomatoes and feta or a little fruit salad? These flat breads look like a lovely combination of sweet/savoury, so I'm trying to see what would pair best. Opinions are greatly appreciated!

    Akis, I applaud you for celebrating real, traditional Greek food--and not fusion nonsense. One note: I would not call this "fry bread" because that is typically a specific kind of Native American bread. "Fried bread" or "cheesy fried bread" would be more accurate for this wonderful dish. A little information about the history of the dish would also be interesting for viewers. As you know, fried bread in general dates to antiquity (Mesopotamia and later Greece) when, before ovens, bread was made in a tigani (pottery frying pan). Cooks discovered they could stuff it with cheese, olives, herbs, etc., which shepherds likely found a convenient way to transport their everyday food. Ancient Greeks were said to have more than 20 ways of cooking these "cheese pies."
