I love the K #300. Does need a few mins soak. That grit and the medium grits are available for about $30 ea in the US.

How did you remove the factory microbevel? In my opinion tojiro knifes have an exagerated microbevel.I guess was a lot of work to get rid of that.

Are you trying to thin the knife? I'm not sure but the angle you are sharpening at seems very low.
shirogami can edge last how long? rope test?
I like my shirogami. I also have aogami, and aogami super. shirogami is easier to sharpen, (and actually they are the ones that are the sharpest in my kitchen, precisely for that reason), If you cut rope for a living, then maybe consider aogami, as it has more lasting edge. the super is nice to sharpen, but really, sometimes I just don't want to be bother.

I stropped it with green alumina on cow leather. It's a well used strop.

Long gone. Everything it can do mine Arkansas stones can do even better without loading up.
