In hindsight, obi wan being essentially a hired assassin who brutally murders the target with a blaster is a pretty strong way to show how far the Jedi and obi wan himself have fallen from the Jedi way

So in other words that single organ was grevious, the robot around it was just a shell he used to have a body, Obi-Wan then essentially pulled grevious out of the body and made sure he was dead. This was then changed to grevious actually having a brain, head and own eyes, and then several organ systems, heart, lungs etc.
This is perfectly in line with the hero antihero stories. Antihero throws around hero while explaining evil plan, while hero guts the antihero once he has the chance.
The most sadistic part about this is that grievous' brain is in his head still, so he would be alive for a few more seconds and probably still live to see his internal organs being blasted to ash.
My assumption would be that this is from an earlier draft of the script, in which grievous wasn't a cyborg but was more like... what durge is? Like some kind of gross slug-worm thing that's essentially piloting a robot. Obi-Wan yanks the grievous worm creature thing out cuz the suit is the dangerous part, and then shoots THAT. That or George Lucas is just way more fucked up than any of us thought.
