I am cooking from last 30 Years Really it is the simplest way and easy way that I have learn from one of street vendor in Allahabad and when I asked him from where He learn from He told me my parents are from JAMMU. Anyway THIS way of cooking DUM ALOO is really very OLDEST way BUT the only think is cook the whole processes in low heat. It will come out with Awesome flavor. GOD BLESS YOU my friend.

ticket2 explore before starting i would like to state i am a real kashmiri pandit your mothers recipe very close to the real one but sorry to say yours is not the authentic recipe for dum aloo.In authentic recipe the hing goes on oil in the beginning and we add little dahi as well and no it does not become dahi wale aloo dahi is an important part of the recipe and we don’t put garam masala and dhaniya powder.
@@Candy_0075 Thanks for the Input Brother, I think u have skipped the part where I mentioned that Mummy forgot to add Hing on oil , so she added later which I also showed in the video , Even Mother asked me whether she add curd in it or not , personally I don't like Curd in Dum Aloo at all , About Dhania Powder and Garam Masala this is all part of Recipe which really enhances the taste.
