If he scored a TD, then there was a _slight_ chance that Oklahoma could have scored a TD and done an onside kick and tied with a FG or scored another TD. By going down, they keep the lead and possession and with Oklahoma not having any time outs, Baylor can just do kneel downs to run the clock out.
