I found that gently toasting the bread before applying melted butter helps keep it from getting soggy. Side note, the white American cheese looks amazing!
After watching a video about grilled cheese with all the cheeses available on epicurious, i decided as an italian to tackle it. I'm 100% hooked on the taleggio grilled cheese, and the key for their recipe was to use mayonnaise on the exterior and the interior was buttered. Althought i considered the cooked mayo a sin, i found out i quite like the tang it adds to the flavor. Magnificent cheese pull and flavor, thought the recipe is very simple it's a great snack to prepare in 5 minutes, also let you experiment with all the cheeses you want👌🏻
Nah, you don’t get even that way. Too many people don’t have level stoves and don’t flatten the bread and it only touches in certain points. Nothing about cooking is rocket science, it’s about finding the most useful way to maximize your time and ingredients

In the UK we add a splash of worcestershire sauce on the cheese before cooking. Give it a try!
