Forget the Set: All You Need Is A 10-Inch Pan | Game Changers

- Lucas Sin believes in 10 inch cookware, and you should too. Lucas, of Junzi Kitchen in NYC, strategically prepares a 4-course meal with just three pieces of cookware: a 10 inch pan, a 10 inch pot, and a 10 inch lid. Lucas demonstrates the fluidity of moving between both vessels to blanch, braise, steam, and stir-fry, proving home cooking can be both high-quality and efficient.

Just think of all the things this guy could do if he had a second lid
He becomes god apparently
Probably will just get in the way
Maybe he'll open a restaurant in New York or something
Your comment made me chuckle a bit, thx.
My first thought! 🤣
My whole life I've reheated frozen dinners and takeout with 9" pots and pans. All those years, I was just an inch away from being a chef. Thanks for nothing UA-cam.
Just 1inch away from greatness
@@captainkatz1775 That;s what she said... 😔
Classic Chinese problem.
🤣🤣🤣🤣
This is the most honest Asian home cooking I’ve seen on a western (white) channel. It’s Chinese but this type of food and preparation is the same for countries like Thailand, Vietnam, Malaysia, and Japan. You’ll never see these dishes in a restaurant, but definitely at an Asian family’s home.
He's not pretentious and fake enough for the current gen of social media crowd, that's why he's not as popular as a lot of other people on this platform. It's all good though, I like his content, he can keep doing what he's doing.
Not all Westerners are white people, ya know... 😕
Yeah, this is what I love about it. It's modest cooking.
These dishes are the same things that my Chinese grandma makes lol.
This is legit homecooked Chinese food, the stuff you do when you clear out your fridge. Haha
I can tell this dude is a chef without even reading the description, he always has a towel in his hand and regularly wipes down the bench counter haha
One of the first thing I noticed. Major qualities of the chef. Being clean and organised.
it get baked into you, that habit. people dont realised that the moment you step into a kitchen, be just as an apprentice or go to a culinary school, the first thing they teaches you aren't how to cook/bake. My first lesson in culinary school was being taught how to clean. Then it weirdly goes 2 ways from here, most cooks either develop a habit outside of kitchen as well and want to be neat and tidy and organised in everything or be the type thats terribly messy and dirty but only strangely neat and clean in the kitchen.
@@-l485 I would be that guy who's clean in the kitchen but dirty in everthing else ask me anything
the Dishwasher Gods will thank him
You'd think that. But a busy night on sautee and I'll blow through countless numbers of these.
asians don't use dishwashers my guy
@@RiceIsBliss Can confirm. It's a heavy duty drying rack. Washing dishes with a machine is a sign of weakness, and that doesn't bode well for the family honor.
Nice comment
@@RiceIsBliss lol
I have been bouncing all over UA-cam just watching the videos Lucas Sin is in.. why does he not have his own cooking show yet?? He is epic. Love his food, his honesty, his recipes, his explanations.. just superb!
Me too. Agree.
ua-cam.com/video/GD6MUfH5whs/v-deo.html Lucas on carbon steel pans.
ggprobably because he owns a restaurant lol. That takes time and dedication
Epic means "heroic or grand in scale or character." It is not heroic nor of good character to create meals by abusing animals needlessly. He applies cooking methods well but he does not show heroism or good character here as he cooks part of a dead cow rather than creating a vegan meal instead.
@@GoVeganForTheAnimal 1) it was obviously a use of hyperbole to make a point
2) standards of heroism do not necessarily have to include veganism. That is your opinion and you're welcome to it, but it's a weird thing to bring up against the use of one exaggerated word
3) have you looked into temple cuisine? you might find videos you enjoy more
Man really just gave out Chinese moms’ cooking secret for free🤣
I love how he's highlighting how home cooked Chinese food is actually healthy and delicious, while being simple and accessible. The use of the interchangeable pots and multiple uses of the hot water was amazing.
"Classic mom move" in the microwave! 🤣
Or just get a wok
all that food looked amazing
The amount of oil used in virtually all Chinese food, including these dishes, is not healthy at all. Chinese life expectancy is very poor especially where people eat more restaurant food, as well.
@@bigppman6991 yeah but not all food use oil. They also steam the food too. I agree as well some food they use is too much oil. Nonetheless, steam food is the more healthy menu.
@@bigppman6991 oil isn't bad for you. There have been plenty of studies that are high oil Mediterranean diet for example, even if it's higher in calories, is not bad compared to even a lower calorie diet. The key is grains. Grains are bad for you, especially how it's normally eaten in excess
Well I'm glad this all *panned out!*
Lmao, I love this guy. Mad consistent.
seariously
Tsk tsk tsk
Economy of equipment, movement, and explanation. This guy is an understated talent.
girl: "u bought xxl condoms?" him: "everything is 10 inches."
🤣🤣🤣
underated
How I wish 😓
10 inches is way better than footlong
Ahhahahahaha
I'm always amazed by Lucas' ability to cook in a white shirt and not get a spot on them.
That classic Asian restaurant cook outfit. White shirt, shorts and pen stuck above his ear, all set to make you a great meal - This is GOLD!
Add a white hand towel wrap around the neck or over one shoulder to complete the ensemble...
This is exactly how my mom has been doing to feed a family of 6 people.
No fancy recipes, no fancy cookware, no fancy equipment and it's still one of the best restaurant in the world: Mom's restaurant.
Thank you mom!
Would love to see more videos like this one! How to make multiple dishes at the same time is an important skill especially to get folks who aren't as comfortable cooking and don't want to deal with tons of dishes. This is an efficient AND delicious meal!
This guy is really good, charismatic, well spoken, make a show with him!!
In other videos, you can see he is also incredibly knowledgeable. Like college professor knowledgeable.
this guy seems truly passionate all the way to the history in his field !
Easily one of the most informative and interesting chefs to watch. Highly articulate and clearly passionate about cooking
lol i feel like im watching an infomercial for 10in pans, and I 'aint complaining! nice work!
Lucas is a pleasure to watch. So much information and very good delivery.
Did not expect legs at 3:20.
Yall need to make more of these. 10 inch pan is what brought me here but I stayed because of the efficiency of cooking. I love knowing what dishes go together and can be cooked "in harmony" like this but I just don't have the time or brain cell to pull them together like that.
So this is why the girls on Tinder always talk about 10in's at least.
Thank you UA-cam for putting this in my feed and munchies for putting this out there for the world and lastly the chef to, you can't have a good cooking video without chef who knows his cookware.
I really love this, practical and efficient home cooking. Being the child of Asian (south Asian in my case) immigrants where making limited utensils work for every application is just a necessity, it doesn't strike you as remarkable until you move away from home. It is a great skill and it is cool that a pro chef is showcasing it.
Also love that Lucas is everywhere now, he is really engaging and honestly a breath of fresh air. No nonsense and really knows his stuff.
Lucas is everything....superhero charm and skills and that calm dedicated voice....love u 💓 💗 💛
would love to see a series like this!
YEESSS
My mom used to come home after work and have a steamed meat dish, a veggie dish, a stir fry dish, and a stew or a soup. All about 45 minutes time-dinner would be ready
Very good! Simplicity, good timing and common sens
He just made a very classic home meal common in many parts of East Asia and Southeast Asia. I ate variations of this every day, growing up. Asian Mom Style is very no-muss no-fuss.
Love to work flow. There is always talk about the best way to do things but it's not always most efficient way. There is a lot of to learn from Chef in that regard. Thereis is Art the work flow. Great demo
This was amazing, more videos like this please!
Gotta love the passion. Keep it up all involved
I learn something important from you every time I look at one of your videos. Thank you!
more of these practical dishes/techniques pls
The diversification and multi use is nice, thank you.
Wondering if this is his apartment kitchen. Didn't think s big time chef would have such a small, understated kitchen, but it's cool to see how he makes it work
as someone who loves cooking at home, i appreciate this efficiency because it means less stuff to clean :D
Aww he reminds me of my old best friend. Sweet, cuddly and squeezable. Oh and great techniques!
Very smart tips, thank you.
This... I need to watch this a few times to understand this magic! Also looks amazing!
awesome video. you guys need to make more videos with this guy.
Absolute Genius !!! Exactly how I handle my kitchen.... Thank you
That was super dope to watch. Nice job guys.
This was great! Thanks for sharing.
FINNALLLYYYY Y'ALL PUSHING SOME GOOD CONTENT AGAIN
Brilliant! Well done!
innovative! i will keep this in mind when i outfit my kitchen
Very practical and useful tips
Thank you, Chef!
We need the recipes for this!!!
Holy shit man this guy is incredible. Love his passion and the Way he explains the process.
notice he has a 10 inch mixing bowl as well ....
just nice for rinsing and cooling veg.
prefect for mixing the meatloaf
and last of all a good place to put the steamy lid
AYYY. i hope this is a new series. focus on other nationalities (tho chinese food is probably ideal for this style of cooking), add an actual ingredient list (maybe just a google doc or something in the description.), and you'll have one of the best cooking series on the planet.
This is some mom cooking methods man, excellent stuff
exactly how i like to cook, I always think about how to cook my meal and also what I need to do after I cook my meal for easy cleaning.
i like the small kitchen make it feel "homey" and approachable
Lucas, you're amazing!
Great video! Thanks
Yess Lucas Sin!!! So happy to see him here :)) his recipes made quarantine in april better haha
Where are you getting his recipes?
More of this guy!!!!!!
I like that he shows you can make anything with 10 inch cookware. America’s Test Kitchen said most pots and pans sets don’t have what they consider ‘full sized pans’, which they consider to be a 12 inch skillet, 4 quart pot(saucepan? lol), and a 8-12 quart stock pot.
I often plan my meals around being able to use one pot. Sometimes it works better than others! 😄
As a Dutch person this video has shown me a side of Asian cuisine which I have never seen before. Thank you for this video!
The perfect video while I’m trying to figure out how many pots/pans I should buy as a single college woman who enjoys cooking for friends and family. I kept thinking should I get a set? But it takes up so much space and I likely won’t use it all. 👍👍👍 thanks also going to check out these recipes as they looks really yummy and remind me of my grandmas comforting Chinese cooking. Just need a little chilli oil. 😋
This makes me happy
Brilliant!
Thanks again for the love on our Carbon Steel 10" frying pan Lucas!
i'm taking a long hard look at your website because of Lucas Sin
@@yeungscs we love Lucas!
@@yeungscs worth every penny. switched from cast iron to stainless steel, never looking back. everything tastes fresh like the food. no leaching from other foods. My cast iron was gunky to the point I didnt even wanna cook at home anymore. got rid of all my cookware and invested in stainless steel from made in. Also got the bluecarbon frying pans. they are great for high heat cooking! these pans also clean easily you just need to learn how to cook with them.
I do not see the 10 inch pot on your website?
Please do more of this kind of content
you. So glad l found him he is awesome period. Thanks
Lucas is a Rock Star!!! @foodnetwork ....are you paying attention??? Lucas is the next aficionado of Chinese American food! Someone needs to take this guy under their wing and let him fly! Seriously, Lucas, I hope you soar to heights you never imagined you could. Thank you for your dedication & tenacity. You are special.
What's missing in this series with Lucas Sin is a web page with the actual recipes.
Very underrated cooking video, I wish more people could see it.
He should make a cook book on efficient multiple course meals. I like to cook but only cook one thing at a time. It was fascinating to see how he didn’t waste anything and see him make 4 separate dishes
BRILLIANT!!
Great concept and all... I can see this working when cooking a meal for 1-2 people, but I often need to cook for 4-5 people or more and a 10 inch pan just really isn't enough to get the job done. But I suppose the same concept would apply to whatever size pan you need. If I use a 14in pan, then pair it with a 14in lid and pot
Yeah I don't think the 10 inches was the takeaway for his message. I think it was the uniformity of the cookware issuing in extra utility
this is the first time i've seen steamed meatloaf representation on youtube
makes me hungry for steamed meatloaf with salted egg.
Nobody should pay for animal abuse in order to make a loaf out of their flesh.
Legendary Lucas Sin!
These dishes instantly remind me of family, you must be a great family man!
Just think of what this guy could do with another lid and a second pot. Loved the lesson Im going to try it, Ill end up with a sink full of pots and pans I just know i will.
Such a good useful video :D
brilliant!
great content. keep it up
This guy legit needs his own UA-cam channel.
Locality of where you can get those particular pans, and price point if it is available to be told. Thank you, your work is absolutely beautiful!
Awesome 👍
I would buy an entire cookbook using this method
I like that he cleans while he Cooks!!! 😀
Everyone should clean as they cook. There are always a few windows where you can rinse or wash something. Then you don't end up with a pile of dishes when you're done cooking.
Honestly, one of the main reason that deter people from cooking is the clean up. My mom has always been able to cook multiple dishes with just one pan and/or with a pot as well. When I will be seeing my American friends here washing 3 different sizes of pan, 5 forks, 6 spoons, 2 pots, multiple knifes, 3 bowls, 2-3 plates. All just to cook 1-2 dish for her boyfriend
Clean n efficiently
Oh my god what an amazing video 😍
This dude is seriously changing the game for us home cooks.
and mise en place! cooking is the best.
Birlliant, simple and efficient. Do it all the time. Love from India and a new fan.
everyone needs to watch this
I would love to see Lucas in action at one of his restaurants. He is probably so ridiculously fast and efficient.
Brilliant
Man, watching him make these, i can almost taste my mom's cooking
LOLed at the Chinese mum trick 🤣
Good shit brother!
I can't do without my 8 and 12 inch pans. Granted I use them less than the 10 but for making things like a single egg nothing replaces my 8. For things like bacon and pancakes I rely on my 12. They stack so the foot print is no different that a 12. The big space waster in my kitchen is tradition material plus cast iron. I sous vide alot so I won't give up my cast iron for searing.
Ooh excellent for 1 person.
i have 12 inch lodge.. good for 2 to 3 .. its always the size of family to the size of pots and pans...
