FYI, Kashmiri mirch is not the hottest (or spiciest). In fact it's milder than other indian chillies. It is used primarily to give red color to the food.
It gives a wonderful sweet and sour kinda taste which actually breaks the hot and spicy taste. It's the only chilli I can eat being allergic to most chillies though we still use other chillies in food
