I'll be making this either tomorrow or Saturday! I've halved all of the ingredient measurements and written my grocery list. I'm going to sub hot Italian Sausage for the ground beef, I'll use some bacon grease instead of the oil and a small package of real bacon bits in place of the Pancetta. I'll make this in my 3-qt. Since I only cook for me, 1 lb. of pasta would make way too much! Love your recipes and am always looking forward to your future ones! My very best to you and yours! Take care!!!

Hi, Scott! Bolognese sauce always has a touch of milk or cream in it. It adds a little bit of creaminess and mellows out the acidity of the tomatoes and wine. Just remember to wait until the end to add it because you never want to pressure cook dairy when there are acidic ingredients in the pot or it will just curdle under pressure. Also, I used ¼ cup in the video, but you could go up to ½ if you want more creaminess. Of course, if you can't eat dairy, you could skip it, but then you would just call it a ragu or a meat sauce!
