You can set the pitch: hold shift key on your keyboard and use your seat/fov buttons. Similarly alt/ctrl combination allows you to adjust the mirrors view angle.
Couple of things I’d add: 1. Turn off time progression if you’re just racing daytime. This saves a few frames. 2. Drop Post Processing to LOW. I think that’s for replays only. 3. Run GTE and only one of the other classes for a big FPS gain. 4. Dropping the settings to MEDIUM has little impact on the graphics, but gives you a HUGE gain in FPS. 5. Reflections and shadows are big FPS gobblers! Turn them down to Medium, even if you’re running everything else at HIGh and ULTRA. 6. Finally, and maybe most importantly, you should run at least 32Gb. When you reduce the number of cars visible, the sim still uses memory to simulate them. I’ve seen the memory consumption peak at 29Gb! More memory means more visible cars you can run on the track and…no more stuttering and freezing! Couple of things…lol 🙄

Cooefficient is like damping highpass frequency filter. So 5% would only dampen the highest frequency wheel movement, and 90% would apply a damping resistance to the wheel even when it moved very slowly. Saturation is damping amount (raw vs damped signal mix) If saturation is 0%, cooefficient does nothing to ffb.
Also if you're wheel feels too light at low speed, pehaps turn the FFB strength up a bit rather than add damping. Too much damping will muddy the signal. Probably only need 5-10% damping on a sc2. If you already have damping in the sc2 profiler, then you want 0% in LMU.

Both have their appeals. Driving is different, neither is realistic. LMU is perhaps more visceral and immersive. However, AMS2 has much more variety in almost every other aspect.
The game has serious memory leak issues, to improve performance simply enable single class of race cars. All settings can be left at max if you have a decent midrange PC, once only single class is selected, the game runs as smooth as butter, load times are shorter and there are no stutters. If multi class is selected, the RAM and VRAM are overflowing and the game FPS is halved due to swapping. If you have SWAP file disabled, it will outright crash. This is alpha software level bug and the devs shouldn't have released a paid game on Steam in this state. Refunded and downloaded pirated version.

The UI is so laggy that I can’t even functionally navigate the menus or adjust settings - e.g. I can’t set up the game, so I’ve refunded it. So irritating to see all the UA-cam videos about it in my feed. Also it’s literally just a reskin of rf2.

If you get shadow glitches/ Black distortions on the track and the walls, set post effects to low.

Try to reduce the audio samples to 64 or even 32. This worked in rf2 and helped a lot in the cpu department
