Hi, it looks great ... only thing I do differently is get a pan, sweat down onions, carrots, garlic and celery, then add the mince to the pan ... keep it all moving until mince is brown, then add the wine to cook off, then add the flour (off the heat) then add stock bit by bit, then after it's reduced, add the tomato purée, and the Worcester sauce. Simmer until thickens (stir occasionally) ... just before putting mixture in baking dish, add the frozen peas. Then top with your lovely mashed potatoes. 👍

The onion first creates a sweetness due to them becoming caramelised.

Great way to do it. Personally I like to add the tomato puree before the liquid so that it browns off a little. Yours is a nice recipe. Worcestershire sauce adds so much flavour.

My mum used to put cheese into the mashed potatoes, used the tines of a fork to run along the mashed potatoes to give it loads of crispy ridges, also slices of tomato on top for each portion.
Coming in after playing out in the snow to a plateful of it was bliss.

Yep, looks good. Comfort food for a cold day and we have plenty of those in the UK. Personally, I make it a lot simpler than that. Basically all I do is the ground beef, an onion, a carrot, salt and pepper and a mash topping and that's it. I forgo the wine, and peas are usually a side and maybe sauteed with celery if you like. In Sheffield (UK) we never use Worcestershire Sauce. We used a product called Henderson's Relish which is a similar product but not as sharp in taste and it has a fuller/rounder flavour. We splash it on when the pie is on the plate

As a proud traditional English Auntie who lives alone in my cottage with my cats I can say that your cottage pie looks absolutely lovely!!!! Some lovely green peas and gravy on the side would be my only additions for this gorgeous pie. Proper comfort! To answer a previous comment about 'starching out the pots'...for a pie like this where you want the mash to be stiff rather than creamy, you don't need to...but there is absolutely no harm in doing so and it would not effect the pie topping if you just add less butter and milk when mashing the pots. If you are making roasties or wedges then that is when 'starching' is noticed more because it effects the outside edges. Also your casserole dish was absolutely spot on. There will always be regional variations to the meat recipe, some people ad wine some don't, some add garlic some don't, some use Bisto, some use no tomato, etc etc. Your final pie looked perfect and looked like it tasted like a Classic Cottage Pie. Sorry for the long message :) take care and all the best x

That looked really delicious, every family has there own variations on the regular recipe so the extra spices are all good. English man here - just some tips for your cottage pie. Bake it in the oven WITHOUT the cheese on top, then take it out, add the cheese and put it under the grill. Makes it lovely and crisp all over. Also, add some Worcestershire sauce to the meat and some white pepper. Pour the meat sauce into the dish and let it cool down to almost cold, THEN add the mash. Putting the cheese on first prevents the mash underneath from crisping. Add it at the end then grill. Cheers bro.

You are right this is comfort food and as such you make it how you like it not how you are told you like it. I think we all vary the recipe a bit and thats totally fine there is no singular authentic recipe. Many of our traditional dishes are made from food thats seasonally available and also takes into account the need for something warming and comforting due to our some what inclement weather. PS make this the day before somehow warming it up the next day to eat takes it to the next level.

I'm going to try adding a little paprika and cayenne pepper or chilli powder to mine now.

Looks epic. One thing I would do is add some bisto gravy to the meat before u put it in the dish and put the mash on top. But hats off to you that looks incredible 🤤 yes to answer u I would eat that.

What you season with is always your choice. All the choices are healthy.Well done just put in some English mustard in your mash, maybe 1 teaspoon You will find what you like
