I make a salad for lunch and also have one slice of homemade bread with some hummus. I usually use only 1/3 avalado. Are usually eat salmon to dry but I have found that the infused vinegar that I buy from my Greek vendor from the farmers market balsamic vinegar with honey is nice
For those who are very strict on oil use with fasting, maple syrup is a decent substitute when making homemade vinegarette salad dressings. If you google "oil free salad dressings" you can find good recipes that use no oil of any kind. I will say that this keeps the salad lubricated for easy eating, but it is not a nutritional substitute for oil because it lacks the equivalent fats needed for efficient nutrient absorption... so you'll want to be sure vegetable fats are in the salad (like avocado or olives).

Oh dear. Long term Veganism certainly isn't healthy. Your brain requires fat. You need heme iron sometimes. Lacto ovo vegetarianism is extremely healthy. Aaahhhhhh! This is a nutritionist saying plant "milks" are good for you? Oh my my.
