    a miracle ! you put in a small glass and take out a larger one . I thought it was only for sourdough ?

      Yes, it is mainly used for sourdough starter or levain. It can also be used for small batches of yogurt or other ferments.

    Do you have a resource on evaluating how robust or vigorous your starter is? the Sourdough Home seems ideal to optimize your starter through exact temperature control, but knowing how to "read" your starter seems equally important.

    Do you have a recommended process for maintaining a sourdough starter? I'm thinking for optimal flavor and vigor. Time, temperature and feedings.

      Hi Doug! We recommend a 1:4:4 seed ratio for feeding your starter. The feeding frequency will depend on your schedule and the Sourdough Home's temperature.     Does this come with an equation to figure out how to lengthen the fermentation of other recipes, like the % yeast for the right length of time?

    So ? Do you need a proofer with the home or no? I’m brand new to sourdough..

    I dont find it useful as long u say how important to have one . But you don't explain how or what to do .

      The Sourodugh Home can keep your starter at a consistent temperature. If you want to feed your starter once per day you can keep it at a warmer temperature, and if you want to feed it every couple of days you can keep it at a cooler temperature.     What if your starter rises out of the jar? Will it ruin the machine?

    Using this Home do we have to apply the same rules ( keeping our starter at room temperature before and after feeding)?

      You can use the Sourdough Home to keep your starter at whatever temperature you need to fit your schedule, so it's ready to use when you want. As long as you are using your starter when it is ripe, you will be all set. We have more information on our website including a time/temperature chart.
