    I Slovenia we make a dessert out of old mashed potatoes - you add some flour to it to get a dough similar to gnocchi, roll it out, cut into squares, put one plum to each piece, close it and cook in boiling water. Top with some fried/roasted breadcrumbs and you have a delicious dish named "slivovi cmoki" (plum dumplings) :)

    I'm also from Europe and it was so difficult and anoying to convert all the cups to grams. So I just bought American measuring cups and measuring spoons. I found them in a better kitchen store and they were expensive, but it made it so much easier, cause I love Lauras recipes and other American recipes.
    Now I just have to convert the fahrenheit to celsius and the sticks of butter to grams. Saves a lot of time.

    Laura thank you for praising Croquettes - I had them in Holland when I was a kid, they serve them from a cart with brown mustard and were wonderful!!! I never see any of the cooking hosts making them. I hope your viewers will try them :)

    YAY!!! I have been searching the web forever for the perfect croquette recipe. I used to love them when I lived in Germany, and they don't seem to make them here. Every recipe I have tried, never worked. :( I am SUPER excited to try out your recipe!! Thank you so much Laura!

    Hi Laura
    I actually made similar ones to these ( apart from adding the cheese to the breadcrumbs) and my husband loved them. I must say I used freshly mashed potatoes ( not 2 days in the fridge) but I did keep them in the freezer for 45 minutes after coating them,, then I fried them. I served them with coconut chutney.

    Ok so i remember you guys saying i a vlog that you laura is going to make indian food. I just cant wait because im a indian. I have some indian dishes that are the best ever 1. Dal makhani 2. Moong dal 3. White chana 4. Pakora 5. Cheese chilli ( my absolute favorite ) 6. Sambhar with dosa ( this is south indian ) 7. Kofta 8. Black chana 9. Biryani ( this is vegetable rice ) 10. Kari. There is much much more that you can always look up on the internet. I am looking very forward to these recipies

    My Mom used to make these, but she filled them with a curried, minced beef mixture in the middle of the potato and crumb. They were delicious! I can't seem to remember what they were called, though.

    i make something similar even the method is the same but mine always had a little problem and thanks to yoou I found out why. I always made the mashed potato right before frying. now m going try ur way of using leftover!

    Joe luvs these with Dijon...I luv potato chops/cutlets/croqs with an Indian style mustard sauce called "KASHUNDI". Its sharp, fierce and oh so yummy.

    Made these today cos we had some week-old purree (they were fine!!!), they turned out amazing, even with regular cheese instead of cheddar. Definitely a great way not to waste food and actually make something delicious out of all the leftovers.
    Kind of want to make some purree now and just leave it and make the croqs again. ;)

I subscribed to Laura in the Kitchen a year ago and have been so thankful ever since! You provided my nephew many, many new recipes I can feed him and I am so very grateful! You also gave my hubby and I lots of opportunities, so we are very much grateful for that. Thanks for being such an inspiration to my family.
    My husband and I are from the UK and it's quite nice to see what is going on out there in America. I believe TheVitales is a great way to connect with your audience and it has helped me to understand you to the full. I hope you can help to understand my situation; that is my husband Marcus and I both work part time, but that doesn't stop us from having a lot of work to do at home. I was fascinated by the fact that you manage your time so well! You work from home, and I was wondering how you fitted in the time. Many a time I haven't the hours to start baking, even though I desire to. My hubby would love to be able to work out in the mornings, as would I, but there just isn't the time with the workload we get.... Please advise us what to do, Laura, as we both love our jobs, but they do require an awful lot of work and we don't have the time for anything else. How do you and Joe manage yours so well?

    I would really like to see some more variation in the cheese department. You mostly use parmigiano, which is fine, but there are tons of other cheeses that I'm sure would go great in your recipes, too.

    a good tip, I let my mashed potatoes sit for a day and as I was making the croquettes they felt very delicate. I put them in the freezer for 3 hours and I was able to get them to become stiff. the fried perfectly and were moist inside.

    crumble some bacon with the potatoes or crush them very small and add them to the coating ! :) i think it would taste so delicious !

    If we don't have left over mashed potatoes, can we just mash some potatoes? If so, how about those ingredients that you put in making mash potatoes? Would it still tastes the same with just the mashed potatoes itself? I loved watching your videos!

    Its so funny u mention Naples to find these kind of croquette, was exactly there, I ate one...with a difference, was risotto croquette, I don't speak italian and I swear I though was potato, but wasnt....anyway, risotto was good as well...and I was in italy, everything was exited! :)
