Eggless Kuih Seri Muka - Steamed Layered Glutinous Rice with Pandan Custard Topping

- A simple way to make eggless Kuih Seri Muka. This popular dessert has 2 layers, the bottom consists of glutinous rice cooked in coconut milk while the top layer is a custard made of pandan juice, all-purpose flour, corn flour and thick coconut milk. The usual version has eggs in the custard. I am preparing an eggless version that is just as delicious as the original version. Do give it a try and leave your comments or questions below. Ingredients:
Lower Layer
1 cup glutinous rice
1 cup thin coconut milk (if using canned/packet coconut milk, please use 1/2 cup coconut milk + 1/2 cup water)
1/4 tsp salt
2 pandan leaves
Upper Layer
3/4 cup all purpose wheat flour (maida)
11/2 cup thick coconut milk
3/4 cup pandan juice (from 6-8 pandan leaves + 1/2 cup water)
3 tbsp corn flour
1/2 cup sugar
1/2 tsp salt
Few drops green food colouring (optional)
Bahan-Bahan
Lapisan Bawah
1 cwn beras pulut
1 cwn santan cair
1/4 sudu kecil garam
2 daun pandan
Lapisan Atas
3/4 cwn tepung gandum
11/2 cwn santan pekat
3/4 cwn air perahan daun pandan (drp 6-8 helai daun pandan+1/2 cwn air)
3 sudu besar tepung jagung
1/2 cwn gula
1/2 sudu kecil garam
Beberapa titis pewarna hijau (mengikut citarasa)
