蛋炒太熟了,不是滑蛋。應該是首先將蝦仁單獨炒至7-8成熟,然後混入蛋漿內,熱鍋炒,多點油,一層一層炒,一分鐘後熄火,用餘溫再炒多三十秒便可。

蛋太熟了!應該是把蝦仁燙8分熟成煎8分熟,再放入蛋液-放葱.加盐少许米洒.胡椒粉.再加入適量太白粉水-調勻-再起鍋-中小火慢炒,蛋嫩嫩刚好熟時-起锅~
才是蝦仁滑蛋!

他这个也不行,虾肉老了。正确的做法是视频中这样的程序,不过在打蛋液的时候加入蛋液1/4的淀粉水。最后出锅虾跟蛋都嫩滑爽口

其實一般人都知道, 蝦仁滑蛋的做法都是先把蝦仁炒熟或煎熟, 再加進蛋漿裡, 傳統更會加入韭黃, 蛋漿入鍋稍為推動蛋漿短時間就熄火, 餘溫把蛋漿完成滑蛋狀態, 把生蝦加入蛋漿一起炒, 永遠不會成為滑蛋, 這是根本性的錯誤, 當然蝦仁炒蛋不少人亦會喜愛, 各有所好而已
這不是滑蛋蝦仁只是一盤普通的蝦仁炒蛋
對呀!他是不是誤會了滑蛋的意思。

@@judychung1124 沒錯,本來菜沒有一定要怎麼做才是對的,但是你得對得起你的菜名啊,既然菜名叫做滑蛋蝦仁就不能做成蝦仁炒蛋啊!如果講清楚做蝦仁炒蛋,那這個視頻就沒有問題啊,但是滑蛋有滑蛋的技巧和特殊風味,不能亂做啊,就好像你說要做烤雞結果做成炸雞,然後你再護航說炸雞也很好吃你們計較什麼?這是事情的道理嗎?我們不是要抬槓,但總不能菜名是A做出B來吧!
