He's the creator of some platforming games. Most notably the game 'Getting over it' I assume he uses that reference when he's in a level where he has to climb or traverse something, for example he said it on that slow ride on the vines with a pit where he has to restart if he falls. I have never played a bennett foddy game but I assume that's how it is. So bennett foddy is the name of a video game creator, he's just referencing the likeness of the levels to his games.

You can find dozens of reactions to people falling after hours of climbing. So the term “Bennet Foddy” comes from the fact that there is really no other defined word to describe “game where you climb and traverse a large area that doesn’t offer checkpoints, thus making falling all the way down a core part of the experience”
