hi it is not advisable to use molasses , not sure but i think it is because you need the dryer sugar to draw the moisture out of the fruit . if you are looking for more info you should check out chris trump or korean natural farming thanks
hi the timing is more based on the heat if your temperature is hot then the process will be faster and i would not recommend more than 1 week in a hot climate
