Kamado Joe Cast Iron Care & Maintenance

  • In this video, I show you a simple way to season your Kamado Joe cast iron grate and griddle as well as give some tips on maintaing them for a lifetime of use...
    Simple instructions:
    Coat your cast iron grill and griddle with an even coat of crisco, peanut, or canola oil. Place them in your grill or oven at 350° for one hour or so. After the hour is up, turn the oven off or close the air vents on the grill and let the cast iron cool slowly. Repeat this process a second time for a more solid seasoning.
    After each cook on the cast iron accessories, use a brush to remove all food debris. Re apply a light coat of oil with a rag or from a spray can of oil to prevent rust.
    If your grill is exposed to the weather, it would be a good idea to store your cast iron accessories inside. Moisture is the enemy of cast iron and will promote rust!

    A little late to the cast iron (reversible griddle) "party"...but I just received mine. Gonna try this seasoning in the oven. I would use my "classic joe" but its working on some ribs. Thanks again for another informative video ! 👍

    old skool cast iron is boil it off and season the pan. That is what we do at deer camp. BTW ordered the whole thing. I love cast iron cooking

    John I just got the cast iron set. When would I want to you the cast iron grate vs. the grate that came with my Kamado Joe?

    Hi, John, thanks for all the greats videos you produce. This year I got my big joe, and cooking have changed forever since then. Last week I bought the kamado joe griddle and I have some questions about how to use it. You displayed in this video how to season it , bat what I’m interested is how to clean it after each use. I own a cast iron pan, and I clean it after each use with hot water and salt, but the big joe is a big number for that. It is enough just to clean it with mi wire brush is enough? Could you produce a video with this topic?

    Where do you get the tool, or the lever for the cast iron, is that a Kamado accessory?

    Nice - I just bought a Akorn Kamodo Kooker, and really wanted to get the seasoning right. I'm going to start with your two coat method, and continue with the food clean and oil spray. However, on Amazon, someone had a alternative to oil maintenance. Instead of oil spray, cut a nice hearty onion in half, and rub onion juice all over the seasoned grill. They said this came from a Chicago chef - but there is no way for me to really know. Is this b.s.? I'm going to try a couple of times and see.

      I have heard a.chef say to use that big piece of fat cap that you cut of meats like on a prime rib or such & grease the grates with the fat. Gonna try it this weekend when I do my Prime rob for Easter?😊

      I just opened mine up and the tool is in Styrofoam right next to the grate. I was going to attach a pic but don't see the option. I would contact Kamado Joe and ask them to send you one.

    I have a Kamado Joe Big Joe grill and I can't find anyone that can assist me in ordering a new hinge. The internal parts broke exposes the ball bearings. I want to order a new one but can't seem to find any help with that. Any suggestions?

    Not that it really matters, but just curious. Whatever became of the *Kamado Joe ProJoe Stainless Steel Grill*? It was a handsome Kamado cooker, but damn expensive.

      Wow, that's interesting. I noticed it was no longer on the Kamado Joe website & concluded - no matter how gorgeous - was not flying off the showroom floor because of the price.
      But I would love to see the new version of this Kamado.

    man, i really wish it didnt have that lifting hole right in the middle. it's not a huge deal but i could imagine it being an annoyance trying to stir small items around the holes. i like the soapstone also but it's pretty pricey and there arent any borders to it to prevent food spilling off the end. i wish they made a full-circle griddle, either cast iron or stainless, with verticle lift out handles on the sides, or even no handles at all. i just need a big, flat cooking surface with no holes.
