Very helpful video. I used this method this weekend for our clam bake and everyone complimented how there was no sand in the clams whatsoever. Thank you very much!
I suppose we can wash mussels in the same way? Oh! I've always been very confused with different versions, some contradicting one another! Thanks so much for this video; I trust your version!
Hi Valery. Washing mussels is different. Mussels don't have mud in them as they don't live in mud. However, they have 'beard' on their shells. So you just need to pull off all the beard before you wash them. No soaking is required. Hope this helps!
I've watched many methods on youtube but never try any, yet always wonder which is the best method. Thanks Chef Roland for providing me the answer 🥳! Merry Christmas to you and Jamie🎅🎉💕🎄

If I bought the clams to be cooked only for dinner, do I soak it then whole time till ready for cooking or do I need to keep changing water every hour? Tks
Tqvm Chef Roland. Hv been waiting for this video. After watching ur video, I hv confidence to prepare n cook clams at home. Blessed Christmas n Happy 2022! 😊
Hi Chef, thank you very much.....was going to cook your recipe for Christmas dinner tonight, juz bought clams and now I can wash it the right way. Can you teach how to prepare fresh abalones too?? Merry Christmas and a Happy New Year 2022 to you and your family!! Stay safe!
Hi chef Roland, i have a large batch of clams, like to wash them clean before freezing them to cook them in small portions in future. Is it ok to wash clean before freezing? Thanks!
Hihi. You can clean first but I would advise you to poach them for about 2 mins before freezing them. This is to get rid of the bacteria first. Hope this helps. Happy cooking!
Happy holidays, Malynn! May this new year bring new happiness, new goals, new achievements, and a lot of new inspirations on your life. Wishing you a year fully loaded with happiness.
Thise clams are a hard shell clam. Theres hardly no sand in thise clams.. soft shell clams are the ones u have to let sit in water for them to spit the sand out. Not hard shell clams. If anyone gets soft shell clams I highly suggest putting them in water and mixing them in cornmeal. Put in fridge over night then rinse thoroughly with water. Then put ur ingredients in pot and steam the soft shell clams and just eat them when their done.. trust me. U will be thanking me later.. I know a lot about seafood

Thanks I made clams a lot in white wine sauce and always wind up in sand in my sauce. Now I can avoid that mistake!

What about mussels and oysters, do you clean those the same way as clams? Thank you for this EXTREMELY helpful video.
Oysters without the shell.. I would wash it with salt and some water. A lot of dirt and slime would come out. Wash them until water turns clear

Thank you for being water wise. So many people just let the water run down the drain during their cleaning process. You think about the resource!
Thanks so much for noticing, Martin!
I always let the water run down the drain.. for about an hour or so, it’s just so much easier!
Thanks for sharing and Merry Christmas 🎄☃️
Happy holidays, Malynn! May this new year bring new happiness, new goals, new achievements, and a lot of new inspirations on your life. Wishing you a year fully loaded with happiness.
Hi, can i use the same method with frozen lala??
Hihi. You don’t have to do this with frozen ones. Just give them a rinse will do.
@@spicenpans thank you!!
Thank Chef 👩🍳 Happy New Year 🎆🎊🎈 2022👍❤️
Happy cooking, Poh Tin :))
I had some bad experience of cooking clams that were actually filled with mud. How do we fish out these as it was sealed tightly like a live clam?
Try using our way and see if it works. Happy cooking!
If I buy the fresh clams in the morning from the market and I only want to cook at night. Do I clean it immediately when I reached home ?
I will suggest that you clean them and then place them in the fridge.
Awesome! Thank you!!!
where did you buy your clams from? I always feel like the ones at cold storage are already dead and not fresh
Hi Marcus, Roland got them from a shop that specialises in selling shellfish in our neighbourhood.
Very helpful thank you!
Thanksss !
Great! Thanks
Nice!
Thank you so much!
Is it true that adding chilli padi to the water when soaking helps the clams spit out the dirt?
he addressed that in the video
My mom would soak clam with a some oil in there for about 30 minutes to 1 hour and there’s never any sand after.
Awesome tip. Thanks for sharing, Tiffany!
no salt or cornmeal?
Do u use cold or hot water🙂
Never mind about that, 😊
Thanks
You're welcome, Perera!
the problem is some clam is empty and full with mud inside
Use cold water
Yes. that's why we added ice. Good tip, SF!
You could add some sesame oil to make them puke out the sand. For a few hours at least.
Use hot water from the tap and the clams will open up. Not boiling water unless you want to cook it.
