If mercantilism died out in the 18th Century how come it still existed in this small town Minnesota town in the late 19th Century?

It's important because it was inhuman. And why would that be important? Because to this day there are still colonies in this world, even if they were declared to be decolonized by the UN, which described colonies as violations of our fundamental human rights. Ergo, people must be educated on history and the effects of colonies in order to avoid the same atrocious and inhuman treatment colonies were given on the countries of today. Colonies should not exist.
No instructor that discusses what Mercantilism did to the would necessarily be feeling morally superior to his or her students, but any instructor that takes him or herself seriously *should* discuss the effects it had, because those effects were real and wrong. A moral discussion isn't necessary when it is clear that lives were ruined for the benefit of relentless empires.

It ultimately revolves around the solid value of gold, making a very predictable and solid economic basis for a system, especially a self sufficient system which does not have to rely on foreign powers for economic stability.
