Hey Jim, with a Swiss roll it must be removed from the baking tray straight away to prevent it from drying out and continuing to cook. It also can't be left too long to be rolled up as it cools too much and will break (as yours has)!!! Hope this helps for next time x
I made a yule log last year and we basically made 2 giant chocolate rolls and cut one in half to put against the other. So it was a branch that went 2 ways. We sprinkled icing sugar on and made some holly leaves, berries and snowflakes
hey Jim the only reason it didn't come out properly is because you need time whisk it with an electric Whisk until it has doubled in size or kind of like foam texture then like with merengue fold in the flower and cocoa powder because it's then super fluffy soft cake you're awesome though!
You need to do a redo at some point and defeat the log recipe! Or a swiss roll or sth like that! Although to be fair it looks fine once the ganache is on. :)
I know other people have pointed out that you should roll it while its hot but I think you needed to whisk the eggs and sugar for longer, it should double in size and turn light and airy, so when you've added in the other ingredients it should fill the tin. Plus the cake would be thicker and easier to roll into a log shape. Anyway I still would've happily eaten what you made 😁
Much better than the Samoa bars I made the other day. The crust broke into pieces and I used too much coconut with the caramel. Bad bad bad, the crust pieces wouldn't stick to the mixture. I had to start all over again. They turned out better the second time.

The problem isn't that you rolled it too tightly, it's that instead of rolling it as soon as it was out of the oven when it is softer and more mouldible, you let it cool. As it sets it get harder and more "brittle" so when you tried to roll it, it just broke. Also another tip for if you ever do it again is that when you take the baking paper off the cake, put the cake on another piece of baking paper and roll the cake with the paper, as it stops it from sticking together when it's cooling.
I made a Yule log in school yesterday. It wasn't hard at all. I think you roles it to tight and also you made an indent with a knife your meant to use a palette knife.

Jim! You should have rolled it when it was still hot hot hot on a clean tea towel to shape it, left it to completely cool and then put the cream in not too thickly and roll it again!

Roll it whilst the cake is hot... and if you add a little more cream when it's over mixed, it will soften

roll the cake as soon as it comes out the oven so that it holds its shape once it is cool enough for the cream to go in it
