It looks like I'm going to have tons of lemon balm this year. I like to do an infusion of lemon balm with apple cider vinegar and use it the same way as lemon juice. I write dates on things too, it's very helpful. My mom thinks it's nuts. LOL. I give nooch to Bear, Zim and Eschathon. I mix it with a bit of garlic and nettles. They love it. This week I'll be making feta with chickpea flour. It's an easier process and hopefully tastes as good as Miyoko's!

My phone is nearly eight years old and I'm curious to see how long it lasts before it gets to the point I think it's time to replace. I've only used fresh lemon balm for the infusion. Once I have some dried I'll try it that way and report back to you. I'm making the feta this afternoon. It's basically like making polenta or burmese tofu with a few added ingredients. Much easier than the recipes I've done in the past. I've seen recipes all kinds of chickpea cheeses, even aged and sliceable. Chef Jana has a stretchable 5 minute cheese. I do pressure cook lentils and they turn out nicely, but not like the canned lentils. There's just something different about them. Have you ever had Israeli couscous? The canned lentils are basically that shape. Just perfect little bean beads. I love them so much. The pressure cooked ones are good, too, but they're not like that.
you will need to refrigerate maple syrup once open, it will mold. but not all it lost if that happens. all you need to do is pour in a pot and remove any moldy bits, heat to a light boil (be careful it will boil over, do not leave your stove) let it cool and store in a clean sanitized glass jar and keep in refrigerator.
Well, I don't have my own recipe. I use the ones in Miyoko Schinner's book, The Homemade Vegan Pantry. I wouldn't feel right posting the recipe. Honestly, that's partly why I haven't made a cheese video yet, because I don't have my own recipe. But I guess if it's still interesting to see the method involved without knowing exact measurements, I could do it. Or maybe I need to come up with my own recipes. I just love the ones she made and don't feel like they need any changing.

I bought the blue corn for the same reason purple corn bread man it's beautiful! It will work if the batter is thick enough. My family prefers steel cut oats, I don't prefer the chew but I'm out voted haha.
It's amazing! It basically tastes exactly like dates, which is not surprising. I don't like it as a straight sweetener by itself like I do the maple syrup. I like it best in baked goods. I have no idea what alchemy takes place in recipes, but somehow when you use the date syrup as a sweetener things turn out fluffier, loftier and have a better texture. This is from my own very small amount of personal observation so far, but my husband noticed it, too once with some pancakes I made. He just said, "These are so good. They're so fluffy." And I told him then that the date syrup seems to do that. So it really does seem to be true.
The lemon balm tea is an excellent idea. Considering how little I sleep during the summer heat, I'd be thrilled over anything that improved my brain function. Do you simply add it to boiling water?
Yes! Usually a medicinal strength infusion (and a super tasty one) is about 1 tbsp dried herb per 8 oz boiled water. Steep for at least 20 minutes covered to really get all of the properties of the plant. However, you can steep for a shorter amount of time to get just a yummy tea, but to get that therapeutic brew a longer steep time is better.

Azure has been like my secret prepper stash for a while now. I'm so sad to see their prices are increasing too but I understand. The 50 pound bag of yellow corn almost doubled in price within a month! I'm wishing I'd snatched a few more. Not yet! I'm actually working on that this week! I'm not sure it's necessarily going to be the healthiest thing as we are still adding maple sugar and whatnot, but it will at least not be as processed or full of GMOs as a lot of the store-bought ones.
I make the oatmeal “packets” and store them in mason jars, but if you have jars from previous items like sauce, that would work in a pinch (make a batch with instructions for single portion attached to jar). I usually will add hot water and it will be ready to eat by the time I am finished getting ready for work. I love Azure Standard, have been purchasing for one year now. Thank you for all the great ideas, always find an item that I would like to try from watching these videos.

I have an abundance of lemon balm in my garden. Thanks for the tea idea. I just got a dehydrator and will try the nettle/lemon balm tea for our seasonal allergies.
Wonderful!!! Lemon balm is another one I haven't gotten to go here. But catnip, oh, my gosh. And rosemary. I have GIANT bushes. What small amoutn of lemon balm I've gotten off of my plants before they died did dehydrate beautifully. It made such lovely tea. Let me know how you like it!

I have been using nutritional yeast for 25 plus years love the stuff. I enjoy the detours you take in your videos because I learn so much and I get a refresher in things I already knew. I’ve made cashew “cheese” sauce and added agar powder to make it sliceable.

I'm virtually positive lemon balm and nettles are both good. My favorite resource was Rosemary Gladstar's book Herbal Healing for Women. It goes into SO much detail that I didn't find in any other books, especially for pregnancy. So are you saying you're expecting?! Congrats!!! 🥰

Oh, nice! Tomato paste for the win! LOL! How do you find the popcorn for grinding? I haven't tried. Apparently the dent corn, which is what I just bought, is the thing you ideally want for grinding. I didn't know that at first. I bought popcorn for grinding, too, but then I got told it's not good for that. In your experience, does it turn out well?
Can the corn you bought be used for popcorn or is that a different type of corn? I dump a ton of nutritional yeast on popcorn, tastes like cheesy popcorn. Lemon balm and nettles are staples in my house too. We drink them in teas and I make tinctures with both and mix them and add Hawthorn to the tincture for heart health. Calms the nerves too.
Beautiful! I should bust out my hawthorn and try using it with some lemon balm. I imagine that would be beyond lovely. We do nooch on popcorn, too! SO good. I learned relatively recently that there is a difference between this corn and popcorn. This is what's known as dent corn, which is what is ground for cornmeal. Popcorn is different. I'm not sure if it doesn't work at all as a cornmeal or if it just makes an inferior product, but I decided to let my popcorn be popcorn and buy this for my cornmeal.
Soooo...I'm not a vegan...but I DO learn about/make lots of different things that ARE vegan...like nut cheeses and other things...and I'm not opposed to having a vegan meal once a week. (I've developed a severe Vitamin D deficiency...or at least become more aware of it during the past several months, and I don't "make" enough via my skin to last throughout the winter.) I'm big into food storage, as well, and have my own collection of 5 gallon buckets and other storage vessels. I just thought you might be interested in a little about your viewer demographics.
I'm always thrilled to hear about the people who watch me who aren't vegan! And, yes, vitamin D3 deficiency is no joke. Most people need to supplement, even non-vegans. I hope you get it fixed fast!
@@VeganPrepper They're telling me there is no "fast" when it comes to Vitamin D restoration. They said plan for it to take a year. The first two months, they had me on 2000 IU per day, and it dropped from 27.7 to 21.1. Now they have me on 50,000 IU once per week. I'm feeling a bit better, especially the first few days after that megadose...but by Sunday, I'm dragging my behind.
I purchased the same case of lemon juice from Azure in May. I have 2 lemon trees (about 2 years old) and neither have produced lemons yet, but in the meantime Azure it is.
Yes, I make date paste! It's pretty great. I like to freeze it as a truly all-natural, fully fruit sweetener. Date paste is blended dates (with all the fiber remaining). It's sweeter than applesauce, but works much the same in a recipe. Date syrup is more processed (it's rendered from boiling visually undesirable medjool dates, like ones that couldn't be sold and has the fiber removed) and is basically another form of liquid sweetener. I think strictly whole food plant based people would steer clear of it. I don't know what happens, though, with recipes but seriously some sort of magical alchemy takes place and things seem to get fluffier and more delicious with the date syrup than with any other form of liquid sweetener. I'm still working with it, but it really seems to be true.
I see the same agar agar on Amazon for less price, fyi. Can’t wait to see your cheese making process. I have been wanting to learn this skill too. It is nice to see your Azure order and I have added several things to my next order.
I finally have time to pick up an azure standard order. Their enzyme cleaner is amazing and so adorable. ( I have a senior dog and that is what gets me excited about azure.)
I was about to recommend RoseRed's nixtamale video, I love her channel. Something to think about with the cornmeal is blue and yellow= green, which would be cool too. My cutoff with Azure was yesterday and you reminded me about the blue corn so I guess I'm starting next month's order. Thank you for sharing your haul and explaining how you plan to use the items. What do you think about keeping it refrigerated? I notice at the health food stores they have it in the fridge but sometimes on the shelf.. my usual is that if I buy it refrigerated I keep it refrigerated but….

We used to buy from Azure and the drop off location and time changed so it's much more difficult now. Canned lentils are low fodmap where home made lentils are not and I have to eat low fodmap now. You bought lots of great things and I have to research some of these.
Oh, wow, I did not know about canned lentils being low FODMAP! That's super helpful for anyone who needs to eat that way. Sorry your drop changed. Hopefully you figure out something that works for you guys or you get a new drop!

It looked cloudy and smelled moldy so I threw it out and have been intimidated ever since. I have Miyoko Schinners, Artisan Vegan Cheese book and will give it another shot once I see you make the rejuvelac. I'm a visual learner and need help. 🤣
Oh, funny! I think my rejuvelac is usually a bit cloudy. At least I hope it's supposed to be because the batch I'm currently making is, lol! I think sometimes just not rinsing the quinoa super well makes it like that. As far as I can tell it's bubbly and smells kind of fermented, so I'm moving forward with the cheese. It's not in time for pizza night, but next week!
Hi Kathy, I eat lentils regularly, but never from a can. Excited to seek them out. Do you rinse the lentils like canned beans? I think that the option to be vegan is a definite privilege. I don’t imagine there were any “vegans” in a stone-age village. :) I’m profoundly grateful I can make that choice. Not sure what I’d do if I couldn’t.
True, true! We are able to do it completely because of the world we live in, but our ancestors were FAR more plant based than modern "caveman diet" adherents would like to believe. Meat has always been a luxury item in virtually every place on earth, which is why I think even still people consider it the peak of all food when it isn't even remotely the most nutritious thing out there. I'm super grateful I can be vegan, too! And, yes, I just sort of rinse the lentils and serve. Salads, soups, wraps, etc. They are the BEST. I think it's hilarious that a certain canned bean is a major treat food for me now. LOL
A great haul! I’m going to have to add those canned lentils to my next order. I’m wondering if you’d share your opinion on nettle/dried herb shelf life….I bought some a year ago (not from Azure) and they recently, suddenly have lost some of their vivid greenness. They’re not brown but they’re certainly not as bright green. They still have a strong scent. Do you have any thoughts on the shelf life of dried nettle? I’m not so much concerned about them “going bad” but wondering about the nutrient loss. Any thoughts from your experience?
The general consensus is about a year to maybe 2 years on the dried herb shelf life (as far as retaining their properties). I honestly don't know that they'll go bad, as in, be unsafe to drink, but they may keep losing their potency over time. Certain things, in my mind (not officially, just my own reasoning) probably never go away. That would be the minerals like calcium, iron, etc. Volatile oils and vitamins, however, will degrade. For my thinking, then, old nettles would still be an excellent source of minerals, even if the vitamins and volatile oils are long gone. Ideal herb storage is much like food: as much as possible keep away from light, air, moisture and heat. For my part, if an herb smells less potent or seems not quite as strong, I tend to dig it into the base of my plants outside where I assume the minerals will feed them.

Mushrooms have B12 and you can dehydrate them or freezedry them . I also read that if dried out properly...their shelflife is never ending.

It's so yummy! I really love lemon balm. I think it tastes great with lavender, too. I do 8 parts lemon balm, 1 part lavender as a tea blend.

Azure has been like my secret prepper stash for a while now. I'm so sad to see their prices are increasing too but I understand. The 50 pound bag of yellow corn almost doubled in price within a month! I'm wishing I'd snatched a few more. Not yet! I'm actually working on that this week! I'm not sure it's necessarily going to be the healthiest thing as we are still adding maple sugar and whatnot, but it will at least not be as processed or full of GMOs as a lot of the store-bought ones.

I make the oatmeal “packets” and store them in mason jars, but if you have jars from previous items like sauce, that would work in a pinch (make a batch with instructions for single portion attached to jar). I usually will add hot water and it will be ready to eat by the time I am finished getting ready for work. I love Azure Standard, have been purchasing for one year now. Thank you for all the great ideas, always find an item that I would like to try from watching these videos.

I have an abundance of lemon balm in my garden. Thanks for the tea idea. I just got a dehydrator and will try the nettle/lemon balm tea for our seasonal allergies.
Wonderful!!! Lemon balm is another one I haven't gotten to go here. But catnip, oh, my gosh. And rosemary. I have GIANT bushes. What small amoutn of lemon balm I've gotten off of my plants before they died did dehydrate beautifully. It made such lovely tea. Let me know how you like it!

I have been using nutritional yeast for 25 plus years love the stuff. I enjoy the detours you take in your videos because I learn so much and I get a refresher in things I already knew. I’ve made cashew “cheese” sauce and added agar powder to make it sliceable.
Thank you for that! I'm really excited about experimenting more with the agar and different types of cheeses. I got a book from the library with a ton of really neat looking recipes.

I'm virtually positive lemon balm and nettles are both good. My favorite resource was Rosemary Gladstar's book Herbal Healing for Women. It goes into SO much detail that I didn't find in any other books, especially for pregnancy. So are you saying you're expecting?! Congrats!!! 🥰

I've wanted to try assure standard but idk if they deliver near me. I think I saw they go about 15 miles out. Let us know about the corn. I've been buying organic popcorn for grinding. And I use my vitamix for grinding everything. I need a hand grinder. Hmmmm, jyst maybe

Oh, nice! Tomato paste for the win! LOL! How do you find the popcorn for grinding? I haven't tried. Apparently the dent corn, which is what I just bought, is the thing you ideally want for grinding. I didn't know that at first. I bought popcorn for grinding, too, but then I got told it's not good for that. In your experience, does it turn out well?
I use it for corn meal or Grits, polenta. It's fine for me. Maybe mor expensive than the other but it's all I could get locally.
Can the corn you bought be used for popcorn or is that a different type of corn? I dump a ton of nutritional yeast on popcorn, tastes like cheesy popcorn. Lemon balm and nettles are staples in my house too. We drink them in teas and I make tinctures with both and mix them and add Hawthorn to the tincture for heart health. Calms the nerves too.
Beautiful! I should bust out my hawthorn and try using it with some lemon balm. I imagine that would be beyond lovely.
We do nooch on popcorn, too! SO good. I learned relatively recently that there is a difference between this corn and popcorn. This is what's known as dent corn, which is what is ground for cornmeal. Popcorn is different. I'm not sure if it doesn't work at all as a cornmeal or if it just makes an inferior product, but I decided to let my popcorn be popcorn and buy this for my cornmeal.

Soooo...I'm not a vegan...but I DO learn about/make lots of different things that ARE vegan...like nut cheeses and other things...and I'm not opposed to having a vegan meal once a week. (I've developed a severe Vitamin D deficiency...or at least become more aware of it during the past several months, and I don't "make" enough via my skin to last throughout the winter.)
I'm big into food storage, as well, and have my own collection of 5 gallon buckets and other storage vessels.

I'm always thrilled to hear about the people who watch me who aren't vegan! And, yes, vitamin D3 deficiency is no joke. Most people need to supplement, even non-vegans. I hope you get it fixed fast!
@@VeganPrepper They're telling me there is no "fast" when it comes to Vitamin D restoration. They said plan for it to take a year. The first two months, they had me on 2000 IU per day, and it dropped from 27.7 to 21.1. Now they have me on 50,000 IU once per week. I'm feeling a bit better, especially the first few days after that megadose...but by Sunday, I'm dragging my behind.

I purchased the same case of lemon juice from Azure in May. I have 2 lemon trees (about 2 years old) and neither have produced lemons yet, but in the meantime Azure it is.
I made a cultured cashew cream cheese once. It was so good. I want to try making more kinds. I'd love to see some videos.

Yes, I make date paste! It's pretty great. I like to freeze it as a truly all-natural, fully fruit sweetener. Date paste is blended dates (with all the fiber remaining). It's sweeter than applesauce, but works much the same in a recipe. Date syrup is more processed (it's rendered from boiling visually undesirable medjool dates, like ones that couldn't be sold and has the fiber removed) and is basically another form of liquid sweetener. I think strictly whole food plant based people would steer clear of it. I don't know what happens, though, with recipes but seriously some sort of magical alchemy takes place and things seem to get fluffier and more delicious with the date syrup than with any other form of liquid sweetener. I'm still working with it, but it really seems to be true.
I see the same agar agar on Amazon for less price, fyi. Can’t wait to see your cheese making process. I have been wanting to learn this skill too. It is nice to see your Azure order and I have added several things to my next order.
I finally have time to pick up an azure standard order. Their enzyme cleaner is amazing and so adorable. ( I have a senior dog and that is what gets me excited about azure.)

I was about to recommend RoseRed's nixtamale video, I love her channel. Something to think about with the cornmeal is blue and yellow= green, which would be cool too. My cutoff with Azure was yesterday and you reminded me about the blue corn so I guess I'm starting next month's order. Thank you for sharing your haul and explaining how you plan to use the items. How long would you say nooch lasts in a bucket?
What do you think about keeping it refrigerated? I notice at the health food stores they have it in the fridge but sometimes on the shelf.. my usual is that if I buy it refrigerated I keep it refrigerated but….
If I'm remembering right, shelf life of the nooch is about 2 years. So it's good for a while, but not as a super long term storage food.
Be sure to tell us if you make the swirled corned bread! Love rose red! I bought some nettle but I forgot what it was for, lol, thanks for telling us what you use everything for.

I would love to see the process of making the homemade vegan cheeses and the ingredients you use. I have been vegan for several years but only attempted a cashew based cheese thusfar. Yours hauls always inspire me to try Azure. I am hoping to place my first order next month. 🙏

We used to buy from Azure and the drop off location and time changed so it's much more difficult now. Canned lentils are low fodmap where home made lentils are not and I have to eat low fodmap now. You bought lots of great things and I have to research some of these.

It looked cloudy and smelled moldy so I threw it out and have been intimidated ever since. I have Miyoko Schinners, Artisan Vegan Cheese book and will give it another shot once I see you make the rejuvelac. I'm a visual learner and need help. 🤣
Oh, funny! I think my rejuvelac is usually a bit cloudy. At least I hope it's supposed to be because the batch I'm currently making is, lol! I think sometimes just not rinsing the quinoa super well makes it like that. As far as I can tell it's bubbly and smells kind of fermented, so I'm moving forward with the cheese. It's not in time for pizza night, but next week!

I think that the option to be vegan is a definite privilege. I don’t imagine there were any “vegans” in a stone-age village. :) I’m profoundly grateful I can make that choice. Not sure what I’d do if I couldn’t.
True, true! We are able to do it completely because of the world we live in, but our ancestors were FAR more plant based than modern "caveman diet" adherents would like to believe. Meat has always been a luxury item in virtually every place on earth, which is why I think even still people consider it the peak of all food when it isn't even remotely the most nutritious thing out there. I'm super grateful I can be vegan, too!
And, yes, I just sort of rinse the lentils and serve. Salads, soups, wraps, etc. They are the BEST. I think it's hilarious that a certain canned bean is a major treat food for me now. LOL

I’m wondering if you’d share your opinion on nettle/dried herb shelf life….I bought some a year ago (not from Azure) and they recently, suddenly have lost some of their vivid greenness. They’re not brown but they’re certainly not as bright green. They still have a strong scent. Do you have any thoughts on the shelf life of dried nettle? I’m not so much concerned about them “going bad” but wondering about the nutrient loss. Any thoughts from your experience?
The general consensus is about a year to maybe 2 years on the dried herb shelf life (as far as retaining their properties). I honestly don't know that they'll go bad, as in, be unsafe to drink, but they may keep losing their potency over time. Certain things, in my mind (not officially, just my own reasoning) probably never go away. That would be the minerals like calcium, iron, etc. Volatile oils and vitamins, however, will degrade. For my thinking, then, old nettles would still be an excellent source of minerals, even if the vitamins and volatile oils are long gone. Ideal herb storage is much like food: as much as possible keep away from light, air, moisture and heat. For my part, if an herb smells less potent or seems not quite as strong, I tend to dig it into the base of my plants outside where I assume the minerals will feed them.
