- I've never had a potato recipe so quick, simple and delicious! No eggs, no flour
Ingredients:
250g Leftover rice
120g Leftover mashed potato
50g Chopped onion
50g Chopped carrot
50g Corn
15g Chopped green onion
10g Chopped cilantro
Salt and black pepper to taste
A pinch of crushed red pepper
Recipe:
250g leftover rice
120g Leftover mashed potato
Mix well by hand or other tools
Pure olive oil or other oils into the pan
Add 50g chopped onion
Add 50g chopped carrot to the pan
Cook for 3-5 minutes on medium heat
Place to the bowl
Add 15g chopped green onion
Add 50g corn
Add 10g chopped cilantro
Salt to taste
Black pepper to taste
A pinch of crushed red pepper
Mix well
Take one piece of the mixture and make it into a pancake
Repeat
Olive oil or other oils
Place the pancakes in the pan
Cook for 3-5 minutes on medium heat
Flip over and cook for another 2 minutes on medium heat
Done!

Potato Pancake Recipe
4 large potatoes
1 yellow onion
1 egg beaten
1tsp Salt
pepper to taste
1tblsp all purpose flour, or more as needed
1 cup vegetable oil for frying
Grate potatoes & onion into a bowl. Squeeze out any water
Mix egg, salt & pepper
Add flour to make mixture thick around 2 - 4tblsp all together
Heat some oil in fry pan
Make pattie’s out of mixture
Put into hot oil to cook
Wait until patty is golden brown then flip
Once cooked transfer pattie’s onto cooked plate that’s lined with paper towel to soak up excess oil
Optional: sprinkle green onions onto patty
Serve with sour cream or ketchup
Enjoy
