Oh man, the intro music. It is like I am sitting at a small square table outside of a cafe on the streets of Pa-ree! I am wearing an amazing new silk button down shirt and I am surrounded by famous people as we laugh and sip wine. What was I saying now? HA! The garlic bread looked amazing. That other music is sort of salsa-y. All the food looked beautiful. The videography and photos are amazing. Great job on this Chef!

I especially love your tips for mussels! i get so intimidated with shell fish. gotta say though, the cheapskate in me cringed a little when you were like "THROW AWAY OPEN MUSSELS" LOL
Lol- oh gosh- you always make me happy with your comments- yes if you are cleaning them and they don’t close when you tap them- they most likely are dead- that’s why I showed that. If they are closed and you cook them and they do not open up while cooking- they are dead- so just chuck them in the trash. It’s safer to throw them away-

Rustic French peasant food at it's best Alex, at one restaurant I changed the name to Provencal fish stew as there was always a couple of diners who'd complain that it wasn't exactly correct. But this dish has such humble beginings that it wouldn't have to stick rigidly to 27 different varieties of fish, it used up whatever the fisherman couldn't sell. Credit to their wives for making the best with what they had. As ever Alex a beautiful bowl of food and a stunning video to watch
Hi Chef- Yes funny how customers at restaurants get persnickety about food. I had to change numerous dishes' names at my restaurant when I put new things on the menu simply because the name of the dish did not resonate with the guest. I also would change menu titles for similar reasons when people would say something like "Well thats not a authentic Maryland Crab Cake, I grew up there"- saying it only to gain authority over the dish when it is simply broiled. Here in the US- you have the people that take food so seriously that they miss the joy of eating because something was not authentic. Then you have many people who have never heard of a dish but are happy to know of it and its accessible by its simplified version. Nice to see you keep warm over there. Hopefully the sun will come out soon and you won't have too many overcast days chef.
I love french cuisine but I never had this in France. This Bouillabaisse fresh fish soup looks so delicious as I love seafoods AT ALL TIMES. I have never thought of making the components and keeping them separate and then just dish up what each individual wants!! This is perfect for picky kids !!! This looks really good, I’m definitely going to try this!!!
Hi Sonia- That’s what we did at the restaurant. Then we would pour the hot broth over the fish. It’s easier that way than giving someone a scallop or shrimp or salmon or Halibut and them not eating it. Actually you are right it’s good way to dish this up for picky eaters.
