    Mangalorean Catholics come together across the globe every year on the 8th of September to celebrate Monthi fest. This is the harvest festival and it coincides with the feast of Nativity of the Blessed Virgin Mary. The feast meal is purely vegetarian in Mangalore and it is one of the days in the year where we absolutely relish a full veg meal. The Cucumber Karamb is a regular on this festive menu.
    Cucumber Karamb or Thoushyache Karamb as it is known in Konkani language is a salad comprising of sliced or chopped cucumber mixed with coconut chutney.

    Ingredients
    3 medium sized cucumbers
    salt to taste
    For the coconut chutney
    1 cup freshly grated coconut
    1 small onion chopped
    1/2 tsp mustard seeds
    1-2 small green chillies adjust to taste
    1/2 inch ginger chopped
    1/2 small ball of tamarind
    Method of making Karamb
    Wash & peel the cucumbers. Sprinkle salt to taste and keep aside. After a few minutes the cucumbers will release water. Discard the water.
    Grind all the ingredients mentioned under 'For the coconut chutney' using 1/4 cup of water. The texture should be that of regular chutney - not too coarse, not too fine. Also, keep the chutney slightly thick and don't make it too watery. When you add it to the cucumbers the consistency will adjust.
    Add the ground coconut chutney to the cucumber slices and give it a good mix. Adjust salt if required.
    Serve immediately
    Notes:
    Please ensure that you do not add a lot of water while grinding the chutney. The salt added to the chutney, will draw out the moisture from the cucumber and moisten the salad. Ensure that you rest the salad for about 15mins for the moisture to ooze out from the cucumber.
