Cantonese Dim Sum Chicken Feet Recipe

    You may wonder what kind of crazy cook can come up with such a complicated recipe for chicken feet. But, after trying this dish, you will admit that Cantonese people have the best way to cook chicken feet. Steamed chicken feet in black bean sauce (豉汁蒸凤爪) is one of the most popular dim sum items. If you have never had it before, get out of your comfort zone and give it a try. You will fall in love with the tender, succulent texture and the rich flavor.
    INGREDIENTS
    To Blanch & soak the Chicken Feet
    1 lb of chicken feet
    1.5 liters (6 cups) of water
    60 g (3 tbsp) of maltose (Amazon Link - geni.us/maltose)
    Lemon juice from 1/2 of a lemon
    Lemon peel from one lemon
    3 scallions, tore into stalks
    1.5 inches of ginger, sliced thinly
    2 star anise (Amazon Link - geni.us/star-anise)
    1/4 cup of Chinese cooking wine (Amazon Link - geni.us/Shao-xing-ooking-wine)
    1 stick of cinnamon (Amazon Link - geni.us/cinamon-sticks-8oz)
    2 bay leaves (Amazon Link - geni.us/bay-leaves)
    1.5 tbsp of red yeast powder, optional
    The Seasoning
    1.5 tbsp of oil
    1 tbsp of minced garlic
    1 tsp of ginger
    2 tsp of fermented black bean, roughly diced (Amazon Link - geni.us/fermented-black-beans)
    1.5 tbsp of soy sauce (Amazon Link - geni.us/light-soy-sauce)
    1 tbsp of oyster sauce (Amazon Link - geni.us/premium-oyster-sauce)
    2 tsp of hoisin sauce (Amazon Link - geni.us/Hoisin-sauce)
    1.5 tsp of Chuhou paste (Amazon Link - geni.us/zhu-hou-paste)
    Others:
    1 cup of peanut, pre-soaked for 1 hour, optional
    Diced scallions as garnish
    Red chilies as garnish
    INSTRUCTIONS
    Add the chicken feet, 1.5 liters of water, Chinese cooking wine, scallions, ginger slices, cinnamon, star anise, bay leaves, lemon peel, lemon juice, and maltose to a big pot, then bring it to a boil. The citrus aroma from the lemon peel helps to remove the unpleasant smell. The maltose will enhance the mallard reaction and give the chicken feet that desired golden brown color. If you don't have it, feel free to use sugar.
    Remove the chicken feet from the water onto a rack until they cool to lukewarm. Reserve the blanching liquid on the side
    Cut off the chicken nails by using a pair of kitchen scissors. Then dab the excess moisture with paper towels.
    The next step is to fry the chicken feet until golden brown, which you can do by air frying in an air dryer (360 F for 18-25 minutes), deep frying in oil (360F for 12-15 minutes), or you can roast the chicken feet in the oven(400F for 30-40 minutes and flip the chicken feet every 10-15 minutes). If you choose the deep frying method, it is best to dry the chicken feet furthermore by leaving them in the fridge uncovered overnight to avoid oil splattering.
    Soak the chicken feet in the reserved blanching liquid for 1.5 hours. Optionally, add 1.5 tbsp of red yeast rice powder to enhance the vibrant red color. You can skip it or use food coloring as it doesn't affect the taste.
    While waiting, you can prepare the sauce. Stir the fermented black beans, minced garlic, and minced ginger with a drizzle of oil over medium-low heat until the aromatics are golden. Turn off the heat, then add soy sauce, oyster sauce, hoisin sauce, and Chuhou paste. Mix thoroughly.
    Chop the chicken feet into smaller pieces, then mix them with the sauce.
    Put the pre-soaked peanuts on the plate and place the chicken feet on the top. If you skip the peanuts, use 1/2 tbsp of less soy sauce to adjust the saltness.
    Steam the chicken feet over medium heat for 1.5 hours. Please make sure the pot is filled with enough water to avoid evaporating to dry.
    Garnish the chicken feet with some diced scallions and red chilies.

    Wow. My local farmer in Kentucky just started offering chicken feet today. I've been really into stir frying lately, and now it's like a sign that I need to advance my Chinese cooking skills to something even more super authentic Chinese cuisine. Thank you for your recipe! It looks easy, the sauce looks really delicious, and I am going to look into getting some chicken feet this weekend.

    When my daughter was in second grade her class had a field trip with lunch at a dimsum restaurant and she decided to order some chicken feet and share them with a friend just to freak out the rest of the class 😂 I think they had some duck feet too.

    I had these at a Chinese restaurant in the 1980's and they were great. I then told my mother (white, poor, grew up on a farm) and she said they would eat chicken feet when they slaughtered the chickens and her older sister was great at cooking them. That would have been in the 1940's and 1950's and likely her sister learned the recipe from her mother so it goes back a long way. But I don't hear about it in modern Western recipes. It's kind of cool to discover some food history. I did notice the other day that my local grocery has started selling chicken feet though. We have a large Filipino and Korean population so it was probably more for them. But who knows? I wonder if I can find an old Western recipe for them or get more info from my mother or aunt.

    Hey there Mandy made these yesterday following the recipe exactly except for the Chuhou paste and red yeast... they were awesome!!! Some might say succulent:) Tried a couple of other quick n easy recipes in the past but this was what I was craving and they didnt disappoint... its a keeper! I laughed you talking about your mom buying from the deli ... I didnt have that option. Next time Im going to make alot extra and freeze them per your suggestion. Thanks again for sharing your recipe... I started to follow and have used numerous recipes of yours... you're my go to for Chinese cuisine thats for sure and you've never disappointed! Thanks again.

    This is one of my very favorite dim sum dishes, but I never really thought about trying to make it because I assumed it would be too much work, but I think I will have to try it at home.     So we go out for dim sum 2 or 3 times a month-HK Café in PDX. The same woman who has served us for years always puts the items we like on our table from her cart. A few years ago she put chicken feet on our table and told me “you must try-“. She taught me how to eat them and said it was OK to place the bones back on my plate. Though I am the only one who will eat these in my family, she gives me my own “special plate” of chicken feet every time we go to HK which I simply can’t resist now. They are truly wonderful.     I remember being in Walmart one time and they had chicken feet. It was their own store brand, but the packaging said Chicken Paws. I still giggle about that whenever I think about chickens and their little paws. 🤣

    This recipe is a keeper and the perfect flavor for me. I'd rather cook it myself and have more whenever the craving comes up. I love that there is an option to air fry, definitely less messy than deep frying.

    I noticed that a lot of elderly Chinese ate chicken feet as their thinking was that the gelatin in the chicken feet helped with arthritis. I'm very interested in food as medicine as I am Native American Indian and during certain times of the year, we, my tribe, forages for edible plants, roots, etc which we use as seasoning, side dishes as well as medicinal purposes. Personally, I simply adore chicken feet at the Dim Sum restaurant and I can't get enough of them! Thank you for this recipe!

    Mandy. When I was in college, I was the International Student Host. One of my Malaysian friends made this recipe and brought it to our International Dinner at my home. It was soooooooooooooooooooo delicious! Thank you. Now I can make it myself. Can you share with us sometime....a Turtle Soup or recipe containing turtle???? I've had that too. It also is delicious.

    I was too 'chicken' to enjoy the dim sum chicken feet over 20 years ago with my colleague and her family, though I was in great company. I would most definitely eat them today the next time a dim sum date pops up. There're so many plates to enjoy.
    Oy vey with the vinegar and the chili oil, etc, it's overwhelming. I love the strong flavors, all of them.
    Sidebar: A long now retired sushi chef once read me well, he said, "you like it fatty and you like it strong". Me: Yes sir, those six orders of nigiri and a cold pint or two of Sapporo will make me a very happy lady 😊
    Let's face it, chicken feet might not be the most visually appealing thing on anyone's plate to enjoy, however, I'd bet a quarter, they'd be enjoyed. If you can eat a chicken wing clean, there shouldn't be much other than more fatty yummy pickings here..

    Having been raised on a farm with several hundred chickens, my sister, and I gathered eggs every day and watched those chickens walk-in manure and dirt. When I see the feet, all I can think of is what they walk through. I’m betting if I tried them I would like them, but I just can’t even think about what it would take me to put chicken feet in my mouth. L O L.

    I remember having Cantonese deep fried chicken feet and I was surprised how much I liked them, the skin fell off the bone and was very moorish.

    It’s hard to convince people to try something they didn’t grow up eating. However, I applaud those that do.
    My family and I came from Perú and we eat Chinese style Chicken feet, as well as beef hearts, pigs feet, intestines, tripe and even Guinea Pig. All are very delicious!! Again, I was brought up eating those meals.
    Perù’s diverse gastronomy is quite something. We were influenced by the indigenous Inca, invasion of Spain and Arab (Moors), Slaves of Africa, China and Japan cultures that have been intermixed throughout the decades.

    I LOVE chicken feet, but everytime I eat them at Yum Cha- I get weird looks from other non-Asians and the Asian customers (and restaurant staff too) often give me surprised looks when I eat the chicken feet!🤷‍♀️😂🥰🥰

    I absolutely LOVE chicken feet. A small Szechuan restaurant had a buffet-style lunch where one could choose 3 dishes from the variety they had laid out. I ALWAYS got the spicy chili-covered chicken feet; they were delicious and rich. Sadly, my wife is not so adventurous, so we didn't go often, and I recently learned that the restaurant didn't survive the pandemic. We are considering an air fryer, and I would love to try this dish.

    Hi Mandy! First want to thank you....my husband & I absolutely love every single one of your recipes that we have ever tried! Unfortunately, living in a moderately remote area, sometimes gives great difficulty obtaining what one might otherwise consider a fairly simple ingredient (& even more difficult when perishable...I think you can likely relate) so just wondering, if anything can be substituted here (w/o too much compromise in taste) for the chicken feet? Sadly, even with the still all too recent coming of amazon to the area, it remains too much in its beginning stages (much like the US version of it back in the late 80s/early 90s😨) so nothing like what many other areas with a more "established" amazon enjoy today. Any advice/suggestion is definitely appreciated, even if it means there just is no substitute so not worth trying for this particular recipe (sadly it wont be the 1st time w/similar experience) Thank you so much, & please keep up your great work!!

      This recipe would work with chicken wings, but probably only the flat and definitely the tip for a similar experience of eating around the bones. The drumette might get too dry however. I'd probably halve the steam time, as the skin on the wings is more delicate than the feet. You'll be missing out on the gelatinous tendons of the chicken feet, but otherwise the flavours would be very similar, and you'll end up with fall off the bone chicken.

    I love chicken feet but never tried to make it myself. I gotta try this recipe now! Chicken feet is my favorite dim sum dish.
