Whether or not there is egg in gelato depends on the region of Italy, as does the amount/presence of cream or milk. Much like whether or not eggs or cornstarch are used in ice cream here in the US. That also varies wildly by region. In short, yes, gelato can contain eggs.

In Sicily where I was visiting there were 4 Gelato shops on the piazza, there were all kinds of flavors ie wine flavored, green onion which was interesting, But the tiramisu made me weak in the knees and verbally gasp it was so so so good...the store clerks looked at me laughed and asked if I was okay...oh yeah!!!

Okay so I found this while looking for a quick frozen dessert recipe because I’m having cravings (naturally) I love the look of it and I love pistachios my only qualm is how long it takes😭😭😭
To anyone who watches this whose gelato becomes jagged, crystalline or flaky during the freezing cycles desipite the periodic churning, such that it resembles a slushy, you can still salvage the gelato. What you have to do is, once it is fully frozen and solid after a 4 hour freeze, with a consistency that's difficult but not impossible to break apart inside of your bowl with a metal implement, take it out of the freezer and with a solid spatula, begin to break up the icecream as best you can. What you will find is that it cracks apart into clumps of semi-solid mass that's very crystalline in texture, forming into chunks where the jagged ice starts to stick together. Then with your spatula, begin to crush and squish the mass everywhere you can, breaking it apart over a period of about 5 minutes. As you do so, you will see it start to clump up even more, still remaining icy, but it will become slowly more workable over time as the ice becomes pulverized. If you continue to do this, squishing the icecream against the sides and bottom of the pan repeatedly, the mixture will become more and more smooth as you continue to crush it strongly, until it is workable enough to stir. After about 5-10 more minutes of continually crushing and churning the mixture, the icecream will start to become creamy and smooth like commercial gelato with smaller grains. For me, i needed to put it back in the freezer for another round because it was starting to melt a bit, but that is up to your preference. Also as a side note, i didn't use cream in this mixture as i wanted it to be more like traditional gelato, so i don't know how well fattier icecream will respond to this kind of churning.

Have you tried using actual beans? If you scrape out the seeds and add them to the milk cream mixture as you cook them and leave the beans in for as long as possible, you should get a nice vanilla flavour.

so basically ice cream is cold milk with sugar, gelato is the same idea but with a higher fat ratio due to the eggs and milks used. tbh its surprising what the 4 eggs do to the taste. can this be done however with almond milk?

I had the same thought. I usually use an 'ice bath' which I think will work well for what we are wanting to accomplish. Pour the mixture into a glass bowl and place the glass bowl into a larger bowl of water / ice (careful not to let the water get into the mixture).

It's easier to churn in a round container like a glass bowl.
This was absolutely delicious. But I had to add more than 1/3 cup. I used homemade cranberry sauce and it was a Thanksgiving dinner game changer!

Hafidz arr I’m pretty sure you can’t, because the heavy cream makes it smoother, and in most baking uses, it thickens up.
