    Could you explain why you do not prime the cask ale? The cask do not hold pressure, not like a sanke keg, correct?

      Some brewers will add some sugar yes, to hit the 1.2-1.5 of co2 once vented at 12-13c usually gives 1.0 if memory serves me. The co2 left in the headspace once put on for chill will give more than enough co2 in the beer once the cask warms up to 10-13c from 8-10c the co2 breaks out is vented and gives more than enough head etc.

    Did you not do a phosphoric acid wash post caustic and pre peracidic? Just curious. Perhaps that's only for stainless fermenters...

      You would do that to passivate the stainless after a hard chlorine based caustic wash, I think also to remove beer stone but I have never had any yet.

      I never prime cask ale, nor do most cask producers.

      The carbonation comes from the residual co2 produced by the yeast at the end of fermentation so once chilled will get absorbed into the beer plus any sugar added to cask once vented will always still get you to the same co2 in the beer anyways at 12-13c i was adding personally 60 grams a firkin 40litres and it wasnt that lively though to be honest!

    Chris, this batch of Vacant Gesture was in primary for 6 weeks. Is that normal for a micro brewery? Alternatively, was it that you were waiting for the casks and that was the driver. Finally, how much does a cask hold?

      Since he dry hops i would say the normal time would be around the week mark with dry hopping and chilling then 1 week in the cask so around the 12-14 day until drunk thats about the time it usually is with most breweries the cask holds 40ltrs pins 20ltrs

    You could boil the finings pint of water to remove chlorine and precipitate the calcium carbonate but at that dilution you probably wouldn't be able to taste the difference.

    Is that Alclear the only type of finings that's normally used comercially as i seem to remember you used to use two different finings back in olden days? I'm assuming you are only using it until you can chill casks in a cold room? Either way it's great to see you now have casks to fill,and kegs soon no doubt,so no holding up fvs and beer production,great news. Cheers.

      Yes mate, I use finings adjunct in the tanks as I cold crash and then Isinglass in the casks. I hope to get rid of the isinglass once things calm down and I install the cold room and a better chiller.
