  • POPULAR GERMAN CAKES: Apple Strudel or Apple cake? Which one is better?// Happy Tuesday, We hope you're all very well! Today we share how to make apple strudel (Apfelstrudel) and apple cake (Apfelkuchen). We were having a discussion and couldn't decide because we love both so thought it a great idea to share both recipes. Apple strudle and apple cake are very popular and belong to the traditional German cakes! So so good! We hope you like this video and can we just mention that Jörg never made Apfelstrudel but it turned out so so well, that it will become a staple now. Kirsten & Jörg xx

    RECIPE APPLE CAKE:
    Ingredients for the dough
    300g gluten flour (you can of course use regular flour)
    1 egg
    200g cold butter
    100g sugar
    1 vanilla pod
    Ingredients for the filling
    800g apples (Braeburn apples are perfect!)
    50g sugar
    1 lemon
    1tsp. cinnamon or spices you love
    Ingredients for the glaze
    150g icing sugar
    1 tbsp. lemon juice
    flaked almonds
    Method
    Mix the flour, sugar and vanilla in a bowl. Add the egg and butter and knead using your hands.
    Divide the dough into 3 equally sized parts. Roll out your first part (I rolled it out using a baking sheet) und put into your springform. Using another part of the dough to form a roll that will be the edge of your cake. Keep the last part of your dough and put everything into the fridge for at least 1 hour.
    Preheat the oven to 180 degrees Celsius.
    Line the springform with baking paper, put ceramic baking beans on top and bake for 15 minutes.
    Peel the apples, finely slice them, add the lemon, sugar and the spices and mix well. Add the apples to the springform.
    Use your remaining dough to form the top of the cake. Prick the dough using a fork. Make the glaze using your icing sugar and lemon juice and brush the top of the cake. You could apply the glaze after baking too but this way, it will be wonderful caramelised. Last but not least, add the almonds on top. Bake between 30-40 minutes at 180 degrees Celsius and let it cool down. Enjoy with some whipping cream!
    RECIPE APPLE STRUDEL
    Ingredients for the dough
    300 gluten free flour (it will be for 2 apple strudel)
    10g psyllium husk (this is important as it really keeps the dough so smooth)
    180ml lukewarm water
    1 egg
    pinch of salt
    2 tbsp. rapeseed oil or vegetable oil
    1 tbsp. cider vingar
    some oil to brush the dough when you set it aside
    For the apple filling
    1kg apples (Braeburn are perfect!)
    2 tbsp. sugar
    60g raisins or more if you love them (we do!)
    2-3 tbsp. lemon juice
    1 tbsp. cinammon
    vanilla pod
    2 tbsp. breadcrumbs
    1-2 tbsp. rum
    flaked almonds
    plus some butter to brush the apple strudel and icing sugar for decoration
    Method
    Mix the flour and psyllium husk in a bowl. Make a hole in the centre and add the egg, salt, oil, vinegar and water.
    Mix the ingredients well using a wooden spoon, then knead with your hands. Brush the dough with some oil to keep it moist. Cover with a towel and set aside for about 30 minutes. This is important because the dough will be a lot easier to roll.
    In the meantime peel your apples and finely slice them. Squeeze the lemon juice over the apples and add the sugar, cinnamon and vanilla. Then add the raisins (it's best to let the raisins soak in rum over night because they will be perfect then.)
    Use a clean towel sprinkle some flour on it. Roll out half of your dough (it should be very thin) with a rolling pin. Brush the dough with some warm butter and add the breadcrumbs. Now use half of your apple mixture and put onto your dough leaving an edge of about 2-3 cm. Add the rum-raisins and flaked almonds. And now use the kitchen and start rolling (first close the edges) and then roll. Do the same with the second strudel, put them on a baking tray (don't forget the baking paper) and brush with butter. Bake for 30-35 minutes at 200 degrees Celsius until golden brown. Enjoy warm with some whipping cream!
