at 4:36, I did not get why to start the count down with 42 minutes and not 45?! Because if we start with 42 and go with the plan, we not only will have 2 remaining minutes, but also another additional 3min!

The first sentence says it is an individual (1) hour-long meeting. 1:00pm to 2:15pm would be the first meeting (1 hour meeting and 15mins break), and 2:15 to 3:30pm would be the Second meeting. Statement 1 says she's in her second meeting and hasn't met with Seth yet. This means Seth would be the last to meet at 3:30pm and not Fatima, therefore sufficient on its own.
