If you get spicy more, then You can ask the shop guy, a little toss of sweet chutney or the curd on the chat to balance or nullify the spice.....thats how you can adjust, balance the taste.
You guys should have local Goan street snacks. The snacks you are having is not even authentic..Try the Ros Omlette instead it's local omlette served with Chicken Xacuti gravy which is Goan street food

If you don't want spicy... Just say NO to chillis 😅 Little bits of chillis are added to the chaats. Or ask them to add some sweet tamarind chutney. You can always customise chaats according to your taste. P.S: That uncle was too curious 😅😂 Its ok. I hope y'all were comfortable.

with curd means with dahi (yogurt) ... menu listed this as next item: dahi samosa chat ... chat comes from hindi chaat from hindi verb chaatnaa meaning to lick ... shop names all sound north indian gupta shiv shakti ... you could have taken sukha bhel or sukha sev puri for husband ... sukha means dry bhel means mixture sev is that yellow noodly stuff and puri is crackers kind of small deep fried savory flatbreads ... it has all dry stuff that goes in regular bhel / sev puri ... regular bhel is one in which dry parts are mixed up and chutneys and sauces and chopped vegetables like onion cucumber tomatoes boiled potatoes are mixed in making it not dry ... and regular sev puri will have puris topped with sev and wet stuff: onion coriander tomatoes potatoes and chutneys etc ... this shop does not have potatoes but potato curry ... so now you know chat and samosas could be spicy burning your innards and making your nose runny ... source of spiciness is samosas ... he did not add spicy chutneys because you said not spicy but samosas themselves are spicy ... maybe for foreigners he needs to prepare non-spicy samosas
