It's ok that a lot of people complaining about oil wastage. But for elderly couple to run a food stall like this is really courageous. His haste shows that has a issue with patience. I know a lot of elderly people who have this problem. This grows with age I guess. But I hope the food is good.

This stall situated in Johor Bahru (Malaysia) city area. It is by far the best oyster omelette. But please be warned that the hawker center situated behind back alley, crowded with insects...
Compared to street food in Kolkatta and. North india this is much more cleaner. Just looking at the method of cooking my mouth waters. Fantastic and hard work.
Nabila also the oil is really dirty which was a major turn off for me. The fact that he was dipping the spatula into the oil pan with raw egg residue is a bad notion all together. Wouldnt even bother eating there because of the possible sanitation hazard. Not worth getting salmonella.

As for the brown liquid, its the flavouring/seasoning sauce cause the batter itself has no taste. The sauce is usually a mixture of chinese cooking wine, fish sauce, soy sauce. But of course depends on the shops, there will be variation. Fried oysters omelette are predominantly influenced by either the hokkien or the teochew.
