Extracting the Essence of Cinnamon - Cinnamaldehyde

  • In today's video we will be extracting cinnamaldehyde from the bark of the cinnamon tree. This exercise was done to create cinnamaldehyde for a precursor reagent to the famous cinnamaldehyde clock reaction, which I plan on doing here soon. The cinnamaldehyde is essentially the base of the common cinnamon oil. We use the method of hydro-distillation within this fun chemistry project.
    Warning: Cinnamaldehyde will burn skin similar to an acid. It is a must, that proper PPE be worn a all times.

    Why in some of your videos do you use sodium chloride to separate oils from water, but in this case your using DCM. Do you have to use a different solvent for every kind of oil that you are trying to extract?

      Really great question. It’s all about solubility of the oil within the solvent. I will always research which solvents have a higher solubility, which allows me to do Liquid / Liquid extractions. In this case the cinnamaldehyde was more soluble in the DCM than the water, which allowed the oil to be pulled into the DCM.
      I have a few charts I could send over of my findings if needed so you could see which solvents I prefer depending on the oil

    What can be used instead of DCM?

      It all depends on the solvent. You could probably use DCMO or ether. Though I would have to confirm that.

      Ether should be able to be used. DCMO is carboxin I believe.

      @@illya.ruslanovichshevchenk4106 After some research, looking at solubility and pKa I dont think esters would work. However I could be wrong.
