I never bought Herman Oak so I don't know about it. When I buy a leather with the intention to dye it, I verify if water penetrates it easy. The leather I used absorbe the dye like a sponge :). I don't tool, I don't have talent for tooling.
I own a number of V and P leather patterns and I have been quite pleased with them and their tutorials. However, I do not like the dye job here at all. I suppose different strokes for different folks. I would say, get the pattern but watch some other videos on dyeing veg tan leather. You might find something you like better and if not, then do what V and P do here.
I made this green with a little black for the first time 3 weeks ago because I need to change something all the time. Now i make the third object dyed this way, custom order. But your advice is good, it's better to choose between many possibilities.

just curious is deglazing necessary to do before dying leather like Herman Oak Strap / Tooling leather?
