Steamed pork hash typically refers to a dim sum-style dumpling made with a savory mixture of ground pork, sometimes combined with shrimp, cucumber, or other ingredients, and steamed to perfection. It’s often a variation of the Chinese dish siu mai, which is popular in Hawaiian and Cantonese cuisine.

Mom also used spicy turnip bottoms. Sometimes they were too salty so she would soak and slice them. They used to sell it loose in Chinatown but now it comes in cans or jars.

Sometimes I add shredded daikon and carrots but maybe salt it for an hour and give a quick rinse. I also like to put a grated apple for some sweetness but don't salt. The next day, pour cabbage into a colander, give a quick rinse and just put it in a large bowl, add daikon. Don't need to squeeze. After mixing everything, no need to add water. When you put it in a jar, press down and lots of liquid will come out.

Sometimes I don't even salt the extra veggies, just add it in. There's enough salt from cabbage.

I buy salted duck egg yolks in vacuum sealed bags, 12 for $8. But now it's precooked. You can make your own with chicken eggs. It takes at least a month to soak in salted room temperature for the eggs yolks only to solidify. I have some in my garage that I made 3 months ago. Mom used to keep a gallon of duck eggs under the sink for a long time. They used to sell salted duck eggs in 6 per carton but I don't see them now. You cannot use fresh duck eggs because the yolk will be soft, they must be salted.
