  • Chef Fuyuhiko Ito from Umi shows one of the most important parts of sushi, peeling cucumber. This is a skill that sushi chefs must practice every day. Chef Ito first cuts the cucumber into three pieces, then carefully peels the first layer of skin off of the cucumber. He rolls the cucumber with the blade until he sees the seeds. Chef Ito then cuts the cucumber skin into three pieces and places them on top of each other. Lastly, Chef Ito cuts the three skins into several elongated pieces for sushi rolls.

      The man peeled that cucumber like it was nothing and that's a hard thing to pull off.

      @@aikogiron3449 For sure! Another thing you can do with this technique is make a roll with no nori, just cucumber for people who don't want to eat carbs.
      They sometimes call it a "Lollipop roll".
