  • Cooking Massive Freezer Meals to Feed My Large Family - Over 175 Servings! That's right, today we are Cooking Massive Freezer Meals to Feed My Large Family, cooking and prepping over 175 servings! We make several 9x13 freezer meal dinners. We meal prep 16 personal pan sourdough pizzas for the freezer. We make 10 loaves of sourdough bread, and get a few of those loaves in the freezer. We also freezer meal prep egg roll in a bowl to help fill my freezer. In addition to all of this massive freezer meals cooking, we do 6 big batch pans of peach crips. We use two for the weekend and get 4 9x13's in the freezer. We also make a homemade gallon of greek yogurt using A2/A2 grassfed milk. We do so much massive freezer meals cooking for my large family, and get all of this done in one evening! I forgot to include the picture of the bread going in the freezer at the end.     Jamerrill, I know from my time in Mexico, tortilla press is used for corn tortillas and not for flour ones. I just wanted you to know that. When I make massive tortilla cooking, I set up a chain. I have the dough in balls, roll out put on griddle and then on the other side of the stove a kitchen towel to throw them in as they come off the griddle. I repeat from left to right until all the tortillas are rolled out and placed on the griddle and tossed in the towel. An older woman from Mexico taught me this system and it has been done in Mexico for centuries.

      Tortilla presses do work very well on flour tortillas. Traditional or not, it's a big time and frustration saver.

    Your new kitchen really is working for you. Just to think you used to do all that cooking in a much small space😮Always a joy to watch you tackle the big batches with ease. ❤ I knew a lady that was a cook for a 500 man camp she had three assistants and the pots they used were hugh and paddles to stir. She got up at 3 am to have breaskfast ready at 6 every morning. Big batch cooking is amazing!

    I just wanted to let you know I find your videos, with your calm, happy narration very soothing when I need to relax, and I find that your spirit of gratitude and accomplishment is contagious. I just have myself to provide for, but after your videos about how you keep a large family fed without cooking every meal and snack on the spot, I feel more able to give myself credit for the food I've managed to fill my own kitchen with.     Love your videos. I used to make homemade rolls. Sourdough bread is so good. My grandmother was a school cook in the 30's on up until she retired. When we went to the same school where she worked and some of the women were still there they made homemade rolls. Best I ever ate in my life. Awhile back I got the recipe. Lisa makes some great looking breads and bagels. You are so hard working. You need a spa day. Take care. ❤

    Hi Jamerill, first time commenter, long time cook and grandma. I love your videos and your calm and easy come easy go attitude. If I may…this may help when you do the ginormous beef broth thing. Use a fryer spatula to get your bones and bits out. It’s quicker than tongs and a little easier when you strain your broth later. Thanks for all your good tips and letting us enjoy your busy life.

    In your pizza dough, try putting in 1 tsp dried oregano and 1 tsp dried basil or 2 tsp dried Italian seasoning into 1 one of the doughs. The herbs give the dough an extra layer of flavor. Just a suggestion.

    Mega mama baker here. You might explore the stand mixer method instead of stretch and folds. It’s a one step process and the only way I make sourdough. I think Lisa uses it in her soft sandwich bread recipe.

    For big batch crisp/crumble put large amounts of butter through the food processor with the grating disk in, it will keep the butter nice and ice cold but small for easy mixing. You don't want warm butter in crumble mix it will turn your crumble into sponge cake mix.

    As far as the big bulk sourdough making, you could weigh your individual loaves to get an idea of about how much each portion should weigh so when you divide the bulk batch into individual loaves you'll know they'll be about the same size as you're used to.

    I just revived my rye sourdough. I first made it for culinary school back in the fall of 2011. It has survived several stints in three different freezer during the years. After I moved to my apartment I found that it took up way too much space. Since I stopped making bread. My disability getting in the way. So I tried the drying trick. Spreading it out on baking paper and letting it dry. Not knowing that it would survive.
    It has lived in a baggie in my cupboard since then. I decided last week to see if it still lived.
    Soaked the flakes in some tepid water with rye flour and some sugar. Left it out somewhere warm and hoped for the best.
    I am glad to say that this almost teenager sourdough is still alive. Which means I have to make bread. Will have to enlist help since working dough is too heavy for me. But it is cool how the wild yeast spores can survive pretty much anything.
    My first one failed, because I used an apple for the store to make it. Went out and picked an apple out in the wild and it would be so potent that it would explode all over the counter after feeding. 😂

    I am happy to live in larg Arabic Muslim family when my mother was a house wife with zero freezing food she was cooking every tow days for us and then when we turn to a teenagers me and my 2 sisters we start helping her and it was one dish for all with fresh salad everyday.. nothing compare to mom cooking ❤

    Just love your dresses, I’ve looked at them on Amazon UK, and they look gorgeous on you, but I think I might look pregnant 😂 I’ve missed watching you for a while, because I had a new iPad and all my videos I subscribed to had disappeared, then suddenly you pop up tonight so I’ve subscribed again. 😂 that’s what we would call it peach crumble, when I had children at home there favourite was apple crumble, and it’s my husband’s favourite if we go out to eat and it’s on the menu, then that’s what he’s having.

    I make a lot of sourdough and a helpful suggestion for you is to use rice flour after you form them and when you are resting the boule in the refrigerator on the tea towel or banneton. - guaranteed it won’t stick! 🙌

    I love all the sourdough that you’re doing! We’re a family of 6 and I do a quadruple batch for bread and it definitely is faster to use one mega bowl, once you get to that point

    Have you started your own kombucha yet???
    I just grew my own scobey from scratch and have my first gallon on its second ferment and we will try it tonight. The initial unflavored kombucha was quite pleasant so I'm excited to try imparting flavors. It took nearly 3 weeks to grow the first scobey. Don't ever give up!!!

    That container for sourdough is great! I need to get something like that. Doing only a little bit at a time is kind of a waste of time considering the amount of labor needed for sourdough.

    You should use a large grater for the frozen butter - this works great for biscuits/pie crusts too.

    The food looks absolutely amazing but being a family of only just me, making these size meals would obviously be wasteful.. however i still enjoy watching them because its very relaxing and definitely informative but i will try to make a couple different meals in individual portions that i can freeze and take out one at a time especially the Philly cheese steak casserole... Looks amazing. I do have to poo poo the snack u made with the babybel cheese and cottage cheese cause for me it looks and sounds quite unappealing and yucky but thats me, lol.( I dislike cottage cheese very much)

    I making big batch freezer breakfast fried burritos...I did a trial run last weekend but they didn't last but this time I'm planning on 10 dz burritos of a variety... maybe I should just stick to egg bacon cheese for now... thanks for the inspiration... there's 7 in my family and I'm the main cook

    I got some sourdough starter last year andwas doing great with it until my son ended up hospitalized for 6 weeks and 6 more months of recovery..nevertheless my starter ended up neglected and looked funky so I threw it out.. hoping to try again soon as I have several gluten intolerant folks in my family

      oh boy, that's fun!! yes, I did get a gluten free starter going and we did make some gluten free loaves with it. Those loaves are more dense, but were fine for toasting and eating. My traditional sourdough starter has gotten more of my attention and for now, my family with low to no gluten needs have been thriving on it. If things go differently health-wise, I will go deeper down the gluten-free sourdough rabbit hole. 😊

    Might I suggest a quicker way to cool that broth? Freeze gallon milk jugs with water or something like a Tupperware tub. Put unopened in each roaster pan liner OUT of the insulating "cooker". That should cool broth enough to get into frig without overheating the frig.

    Sour dough bread is the best! I have never tried sour dough for pizza, something I should do.

      There is a channel called “Our Small Footprint”, an Australian one, and the lady there uses sourdough for everything - not just bread but flatbreads, muffins, cakes, granola, pasta…it’s really interesting to see what can be created with it.

    Jamerrill maybe let one of the kids or your assistant take the dirty dishes to the baby kitchen and wash them while you are still working on filming and it won’t make the noise and it will be done before you go to bed and for the next day ? Just a thought 🧐 thank you for sharing 😊🙏😊

      That is a sweet idea. I don’t have an a kitchen assistant here to watch dishes for me, etc. And the kids are sometimes available but they also have their own activities and other adventures. They build up from all the cooking and that’s OK. We got them done the following morning. 💗💗💗
