Edible Cookie Dough 🍪 Low-Carb & Keto

- Cookie dough is that incredible food you're not supposed to eat and is spoiled when you cook it (who else things cookies are a waste of good cookie dough?). In this episode, I show you how to make two versions: a quick 5 minute version and a more time consuming (but worth it) version!

Version 1 (Quick)
INGREDIENTS:
56g almond flour (~1/2 cup) (amzn.to/2QYzOXn)
2 tbsp coconut flour (amzn.to/31ZnP22)
1 tbsp allulose (amzn.to/3gYQMzG)
1/2 tbsp brown sugar Swerve (amzn.to/2EYRvDW)
2 tbsp room temperature unsalted butter
1.5 tbsp cream cheese
2-4 drops vanilla extract
pinch of kosher salt (amzn.to/3hWAEQm)
Low-carb chocolate Chips (Such as Lily's: amzn.to/2Z8gcEC)
DIRECTIONS
1. Mix the almond flour, coconut flour, erythitrol, and brown swerve.
2. Add the butter, cream cheese, and vanilla extract. Mix until well combined.
3. Add the chocolate chips. Mix to combine.
4. Place in the fridge if you want the dough to get a little firmer. If not, simply eat straight from where you have it with a spoon!
Version 2 (slower, but tastier). Makes ~20 cookie dough balls
INGREDIENTS
110g almond flour (amzn.to/2QYzOXn)
35g coconut flour (amzn.to/31ZnP22)
40g vital wheat gluten (amzn.to/3hZSke4)
110-120g unsalted butter at room temperature
155g allulose (amzn.to/3gYQMzG)
60g brown sugar Swerve (amzn.to/2EYRvDW)
6g kosher salt (amzn.to/3hWAEQm)
1 egg, preferably pasteurized (if not pasteurized, consume at your own risk!)
vanilla extract
low carb chocolate chips (such as Lily's: amzn.to/2Z8gcEC)
DIRECTIONS
Mix the almond flour, coconut flour, and vital wheat gluten in a bowl until well mixed.
In a separate bowl, mix the butter, allulose, brown sugar, and kosher salt in a large bowl until it has the consistency of wet grout.
Slowly add the dry ingredients to the wet ingredients and mix until well combined. Taste and adjust accordingly.
Once the mixture is to your satisfaction, add your desired amount of chocolate chips.
Cover the dough with plastic wrap and refrigerate for at least 45 minutes. This is so harden the butter so that it is easier to mold into the desired shape.
Using a melon baller, ice scream scoop, spoon, or other utensil, roll the dough into balls and set onto a plate.
Refrigerate for another 30 minutes to let the balls harden a bit.
Consume and enjoy!
To pasteurize the eggs:
Method 1 (difficult):
Cook the eggs in 140F / 60F degree water for 8 minutes. If the temperature exceeds 142F, the eggs will cook.
Method 2 (easy):
Using an immersion cooker (sous vide cooker), cook the eggs at 135F / 57C for 90 minutes. (sous vide cooker: amzn.to/2Gy7eKH)

That being said...
I am not a fan of cookie dough... never was. I do have a massive sweet tooth, but since cutting off carbs and added sugars I had to cut sweets off because I truly dislike this low carb alternatives (or at least haven't found one which taste I can stand).
I hear ya. The few times i cut sweets out completely, I found that my cravings went away. Your palate changes and you find things like veggies sweet
In most of my sweet stuff, i put in blends of the different keto sugars, dry and liquid form, for better taste
They all have their +/- blending different ones def gets closer to the goal

Frozen cookie dough... Try it. Cut it up into little pieces after you freeze it and add to plain whole fat yogurt. Yum!

Best way to know if the dough is good is if you can eat it raw! Man after my heart.

I would like to see a peanut butter cookie recipe done keto style or even a sunbutter keto cookie recipe. But I hear when you do sunbutter, it turns green on the inside when baked. So I did half peanut butter and half sunbutter but with regular flour and it turned out amazing. I would like to see your take on this please!

Also, I just made this. Had to substitute a few things. I used all almond flour, confectioner swerve + brown swerve, and milk chocolate Lily's chocolate chips. I also used the unsalted Gold of the Kerry's. I tried a small bite right away. Delicious! I always like finding new keto snacks, as I have a sweet tooth as well. I am chilling the cookie dough in the fridge right now. I guess I should go wash the dishes and clean the counter. Because... ants! This channel is now my go to for keto, and I've made several of your foods. Well done sir. Well done!

FYI (revisiting this in prep for making it now that I bought everything), not sure why you say the vital wheat gluten is carb-less when it has 4g of net carbs. I'm still using it but yeah make sure you count that in your macros!
I can't do all that with the egg for the 2nd recipe. I'll just use 1/4c of Egg Beaters which are pasteurized liquid eggs. But I AM quite intrigued with using Vital Wheat Gluten. I bought a bag thinking I'd make low carb stuff but now that I spent the ten bucks I have no idea what to do with it.😂

I have to disagree while coikie dough is better than some cookies I like cookies that carry milk well when they can maintain integrity and love the texture of a Cookie with a crunchy caramelized edge that's chewy to soft as you approach the middle. All of this being much harder without traditional flour and sugar.
I need to try allulos more.
I really like substituting out for all nut butter in my cookie recipes.
I'm not a vegan so I don't worry about egg substitutes but it would be nice for those that care. We are sort of niche.
I'm wondering if I can pasteurize eggs with my instant pot I haven't gotten a sous vide cooker yet. It's on my list of things to to get.
I feel like the instant pot would be difficult unless you can set a temperature on it. As far as the cookie dough... Yeah, some cookies are better baked (double chocolate caramel type come to mind).

Wait vital wheat gluten is carbless? The bag shows barely any fiber. Is it kind if like oh xantham gum used to be listed as zero carb but for FDA reasons they had to change it even tho we can't digest it?
Its not entirely carbless, but for a quarter cup, its about 4g. A quarter cup of that stuff... Is a lot lol. The leftover stuff should be insoluble and protein but I cant say that for 100% since im not a food scientist :/

I am a very newbie cook (I almost always ate out before Keto) so I managed to screw this up pretty badly lol but it still seems to be coming out OK! They are in the fridge now but I did sample a small bit. Ways I screwed up in case it helps anyone else: 1) I tried to pasteurize my eggs in my Instant Pot using the Sous Vide at 135 but that thing is really just not very accurate. I ended up with essentially poached eggs instead. I still used one though! And to get a bit more liquid I also add the yoke of a second one. I think I'll be buying a dedicated immersion circulator for the future as this process is just to precise for the Instant Pot :( 2) I just started combining all the dry ingredients in one bowl before I realized some of them were supposed to be done separately. So I ended up with the butter, eggs, and vanilla in one bowl and everything else in another. Combining them was... interesting.
Eggs are a good marker for how accurate your cooker is - the 135 is the upper echelon for pasteurized eggs. The whites get a little cloudy, but they should still seem and act raw. Im glad youre cooking - its a wonderful world where you get instant feedback rather quickly! You CAN also use raw eggs, but it poses a small risk of salmonella.
@John Vanderbeck you could just buy egg beaters, which is what I do to make my keto edible cookie dough. I saw the recipe on another UA-cam site ( Jeff Duff )for edible keto cookie dough.

Does it make a big difference between using salted vs unsalted butter? All I have is salted at the moment.
You can use salted - unsalted just gives you more control over the the saltiness of the final dish

I tried - but psyllium husk just doesnt have the right flavor or texture that you want in cookie dough

Black Tie Kitchen Thanks for answering back. Anything involving chocolate would be welcome. It’s so frustrating trying to find a sweet keto treat that doesn’t involve almond flour. We keep a nut-free home due to my son’s nut allergies. There must be a way to use coconut flour to make some chewy brownies, right??
Maybe. My first guess would be to use avocados/zucchinis or something of the sort to give it texture. Coconut flour is very absorbent, so it would still need to be used sparingly 🤔
Id probably say something like panna cotta/puddings/are probably rhe way to go. Ive had an idea for key lime pie fat bombs, but with a almond crust... Could probably just leave out the crust part
Black Tie Kitchen is there such a thing as chocolate panna cotta? Pudding might be good. I used to use Kelly the Kitchen Kop’s chocolate pudding recipe, but I haven’t tried to ketofy it.
I havent tried those either. Regular panna cotta is pretty good in and of itself and it's on my 'to-film' list. I have a zucchini in my fridge I might use for some testing 🤔
