I live in Michigan and my smoker sits all winter long. One of the issues I have is I get a white mold on the inside forcing me to clean the inside. What can I do to prevent that from happening? I have a fatboy if that helps.

I had that issue on mine a while back. I have a propane tank with a "flame thrower" (brush burner) attachment to kill weeds in my driveway, so l opened the smoker up and ran the flame thrower through it for a minute - probably a lot less - and the problem was eliminated. After that l pretty much just cleaned it out after every use or two, with the open door facing the sun to help it dry thoroughly, and the problem hasn't returned. But yes, it was kinda gross and I was worried about mold when l first encountered what you describe.
