    Chocolate Meringue Pie, Chocolate Cream Pie
    REFRIGERATED PIE CRUST
    1 CUP SUGAR
    2 HEAPING TBSP. COCOA
    3 TBSP. CORN STARCH
    1 CUP EVAPORATED MILK
    1 CUP WATER
    4 EGG YELLOWS (SAVE WHITES FOR MERINGUE)
    1/4 STICK SALTED BUTTER
    1 TSP. VANILLA
    Preheat oven to 375 degrees.
    Put pie crust in 9-inch standard pie plate. Crimp edges to form edging (see video tutorial). Prick pie crust with a fork and bake for 14 minutes or until golden brown.
    Take out of oven and turn down temperature to 325 degrees.
    In a glass batter bowl whisk together sugar, cocoa, and corn starch. Add milk, water, and egg yolks, whisk well. Cook in microwave on high for 4 minutes.
    Remove from microwave, whisk well making sure to whisk along sides and bottom to incorporate starch that may have settled.
    Continue to cook at 1-minute intervals until thick and creamy. Take out and whisk in vanilla and butter.
    Place in pre-baked pie crust.
    Top with meringue.
    Seal meringue around edges of crust leaving no holes.
    Bake in 325-degree oven for 25 minutes until golden.
    Meringue Ingredients
    4 EGG WHITES (ROOM TEMP)
    1/4 CUP SUGAR MIXED WITH 2 TSP. CORN STARCH
    1/2 TSP. CREAM OF TARTER
    Preheat the oven to 325 degrees.
    Add egg whites to a clean dry mixing bowl.
    Use stainless steel if available.
    Mix whites on high speed until they begin to foam.
    Add cream of tartar and gradually add sugar/starch mixture while beating on high.
    Beat until stiff peaks form (do not over beat).
    Should be ready within 3 minutes.

    TAMMY!!!!! I have to tell you I just made this pie for my husband. HOMERUN!!! His mom just passed, she was 93 and he said it tasted just like hers! To bring comfort like that to my honey makes my heart rejoice. Thank you Darling!

    I was born and raised in NorthEast Texas, my Great Grandmother used to make these pies when I was a kid. Makes me think home and floods me with cherished memories.

    I just happened by your videos watching UA-cam. I just watched you make your grandmother's chocolate pie. It is the exact chocolate pie that my grandmother always made for me. I have not had it since she had passed away decades ago. Now I have the recipe and I cannot thank you enough. I have looked high and low for a chocolate meringue pie and have never found one.     I canned a dozen quarts of your spaghetti sauce. 5 times the recipe. No meat. Will brown and add the kind I need when I make the dish for dinner. It's our favorite recipe, hands down!

      Gee, never thought about my (our) Southern Accent, but thanks. We are slow talking, and love to feed you our favorite foods. When I found Tammy, I stopped looking. I live in NW Alabama and she lived in Central Georgia at that time. To me, Tammy wrote the Bible on Southern Cooking.

    As a child, one of my first words was "pie", and that meant Ollie Belle's chocolate meringue pie. She'd come to do work for my elderly grandmother in Tazewell VA back in the 1960's, and occasionally she'd make a pie in addition to doing housework. I've never had a pie to equal Ollie Belle's, and I've never succeeded at making any chocolate pie that begins to approach it, but I hope to try your granny's recipe someday and I'll keep my fingers crossed!!! It certainly LOOKS as good as Ollie Belle's! Thank you so much! 😺💕🐾

    That's exactly the recipe my mama made chocolate pie ever since I was little. And I'm 70 now. Everyone always begged her to make chocolate pie. I lost the recipe and now I have it thanks to you, praise God. Thank you.

    This reminded me of my Grandma. I used to stand at the stove as a child and watch her make this pie. And of course, as you said, she used regular spoons to measure, not actual measuring spoons. She always eye-balled measurements. Thank you so much for this video, it gave me such happy memories! Now if I could only find her fried chicken recipe. LOL I have never tasted anything like hers, and I have scoured the internet for it, no luck. It is the recipe my family mourns because nobody knows how to duplicate it, not even my mother who is an amazing cook and had most of her recipes.

    TAMMY!!! I made this pie and it came out fantastic!! It tastes just like my grandma Hogan's. I used a tablespoon from my flatware set just like you did and I also used 5 eggs and 5 egg whites. It was a vision of culinary beauty!! I cannot say thank you enough. You are amazing.

    Another tip. If you put some butter on either side of whatever you slice the meringue with, the butter will keep the meringue from sticking to the cutting instrument. Prettier slice of pie that way with no ragged edges to the meringue.

    I just made this pie and I can't wait to eat some. It reminds me of my Aunt Louise's Mile High Chocolate Pie. She made this pie every Christmas when I was a kid in the 70's. Her meringue was piled high hence the name. I dug up her old recipe and she used 4 egg whites and a cup of Marshmallow Creme to get the meringue so high. It still works! Thanks!

    I cannot believe that you also remove the white attached to the egg yolk before cooking!! My Mom and Nana taught me to always do this, too. But, you are the only cook on media that I see that still does this traditional preparation of ours! 🐣

    👏🏼💗🥰This one made me cry, remembering this among other amazing dishes at our cousins' annual church homecoming. That was some of the best of my childhood, & still today I've never found food to match it, but I believe this pie recipe hit the mark, thank you, I'm gonna try it!!!

    Your Granny's pie is almost the same as the one my Granny made...except she used half and half (from our own cows), and she use more cocoa powder (she liked a dark chocolate flavor, as do I.) I'm going to try her recipe, using your microwave shortcut. Your pie looks lovely and luscious!

      Same here, almost the same as my Grandma. But she used almost double the cocoa powder and cream as it mimicked in the olden days the cream that cam on top of the milk. Vintage recipes are the best.

      @@CollardValleyCooks Tammy my granny used all purpose flour instead of cornstarch do you reckon it would still be ok in the microwave to cook it your way. I just can't stand at stove anymore to cook it over stove top. I'm a new SUBSCRIBER and I've fallen in love with watching you cook.

    My grandma made the best pies ever growing up. And chocolate, similar to this was my favorite. She use to also make a chocolate gravy, served with biscuits for breakfast. So delicious

    This is my mom and grandmothers recipe too! My mom passed away two years ago and I always thought I had plenty of time for her to teach me her pies. I always had trouble with mine. My mom made the most beautiful and delicious pies! Every Christmas she made two chocolates meringues, two coconut meringues, two pecans and a lemon meringue. That was just the pies lol. She made the most perfect pie crusts I’ve ever seen. Thank you so much for sharing your tips. I like the microwave idea. I think I can do this now! Btw, I’ve never seen a mixer like yours..

    I like the way you cook! I make both vanilla and chocolate pudding in the microwave, using cornstarch, 6 cups of milk, half & half and Splenda, add a little vanilla and butter as you did. But I see that for a pie the mix must be much thicker so the added eggs do the trick. I have never had much success with meringue but you have inspired me! BTW, I heat my milk first for about 3 minutes, meantime mix the cocoa, Splenda and cornstarch. then whisk it in with a flat bottom whisk so it never sticks, continue to microwave 2 minutes at a time until it is cooked, going down to 1 minutes at a time if needed. In my micro that totals about 12 minutes.

    I made the banana cream and now today, the chocolate and it was so easy and sooo yummers. It came together in less than 20 minutes. We're doing whipped cream for more of a French Silk type. Thank you!

    Thanks so much for sharing this. It looks just like my mother’s did. I lost her four months ago. I’m the only one of her five children who likes to cook so she and I had that in common. She was a wonderful cook and baker. 💜

      Tamara, I am so sorry for your family’s loss of your Mom. I know that you treasure cooking with her in the kitchen. I miss cooking with my Mom and Grandma and started tearing up reading your comment. Everything we cook has some of our Mom’s in it, as we learned at their elbows. Thanksgivings are so hard without them. Thanksgiving has never been the same. I know I’ll see them in heaven at least. What a reunion it will be!

    Absolutely beautiful!! Just like my mom's (I'm 60)! I was just thinking about her chocolate pie the other day lol. I'm actually a terrible baker so I've never tried any of her pies on my own. Watching your video has given me the courage to do this! I want to do this pie so much!

    This is absolutely wonderful. It taste so much like what my mama made when I was growing up she always made graham cracker crust so I made this pie the other day for Christmas with a homemade graham cracker crust. I did put an extra tablespoon of cocoa in it and no meringue or Cool Whip and it turned out absolutely wonderful . It was a huge hit. Thank you so much.

    I gotta tell you. I felt like cooking today. So I made Mexican chimichangas and all the fixings and your chocolate pie. I did use my mamas recipe, which is almost the same. She used flour instead of cornstarch. That’s the only difference and a stick of butter. Can’t remember how much you used. I think a half stick? Anyway, I made it in the microwave and it was so easy and less cleanup. Thank you so much. My meringue looks fantastic!

    My mother taught me to bake this same pie...it was my father's favorite...one thing...no shoes and barefoot in the kitchen...Must be an eastern thing. That just drives me crazy...lol..love your shows...

    I use Wilton powdered meringue, 1 tbsp plus 2 tsp meringue powder, 1/2 c granulated sugar & 1/3 c cold water. Whip the powder & water in a mixing bowl with an electric mixer on high speed until soft peaks form. Gradually add in sugar & whip until stiff peaks form. It’s safe to use right away without browning but I always brown mine and it’s absolutely delicious.

      I buy it at Walmart in the Wilton section, near the party supplies. I think it’s around $4. Shelf stable. And delicious. You don’t have to worry about messing with egg whites.

    Ms Tammy I so enjoy this that's exactly how my grandmother made chocolate pie and my mother truly loved her mother's chocolate pie but for some reason she just couldn't get it like her mother had made it I don't know why so I would make it every year for her Birthday now I can use the microwave oh that is so much better can't wait.
