Good tip @grogueQ , I’ve never used home grown peppers before, that’s my next hobby. My skin isn’t sensitive to even ghost peppers, so didn’t think of mentioning it. Ventilation is also helpful, the capsaicin does get in the air and can be quite bad. However cooking them right in the vinegar rather than sautéing or roasting helps a lot. Great tips to add though. Thanks.

Good tip on the vinegar for the airborne capsaicin, but if you don't wash your hands thoroughly or wear gloves you can get it in your nose or your eyes or let's just say another region when you go to the bathroom.
