My dad also runs a hotel.. According to what I see it is a very difficult business. After preparing all food , if enough customer as expected didn't come, then u will have to throw all the food into garbage. It's just like trying your luck for a day.
Also another problem we r facing is daily customer does not allow to increase the price atleast a little. Recently we have increased the price for chai from 10 rupees to 12. Then daily customers responded like we did something wrong. 10 rupees was 2 years back. Now the price for everything including, lpg, sugar, milk, had increased. Workers wages have also increased. Then what can we do other than increasing the price. Also in Kerala we can't take extra charge for second serving of rice. A meal include 8 types of different dishes and the price for some vegetables are sometime really high. Vegetable vendors can increase the price of vegetable according to daily price variation in market. But we can't do that.Some customers intentionally ask for second serving because they don't have to pay for it. But they wont have it and just waste it.

Decrease the quantity.. And 12 rs for chai is very low.. At my place it's extremely high.. you just say it as fixed price

I have seen one restaurant which closed as there were way too many customers than he could cater to. The customers got fed up with hours of waiting time and restaurant closed in few months of it's opening. It had everything, professional chefs, most modern gadgets, upbeat menu, very good taste, substantial seating yet not enough, and it closed down.

You can’t be fully dependent on zom n Swiggy. You gotta pay 23% as commission to these aggregators. Besides that u will have to pay for advertising. U can’t just solve ur problem by increasing the food prices for online orders as that will gradually get your sales down so u gotta bare that percentage. Moreover you gotta provide discounts, combo offers. And the final point is wastage in ur kitchen. Lol, think once again if ur starting a resto/cloud

Service and speed are the most under rated ones restaurant business. In over seas Indian restaurants, i find minimum two chefs in an open type dhaba restaurants. Owner a chef kicks himself in third stove if crowd swells in. Minimum 3 is to one should be chef number. One shef for 3 tables.
