Kristy, thanks for another wonderful meal prep video! Suggestion from an old “prepper”, to preserve the freshness, perhaps you may want to consider putting little baggies of salt and pepper inside the container because salt begins to break some of the veggies down as soon as it touches them (especially those mushrooms). Sans salt, you might find that those veggies remain fresh longer. Edited due to redundancy

They are definitely convenient, but they're like $2.50 for one of them!!! And there's hardly anything in them, and then you have to add the egg yourself. So, it's definitely much, much cheaper to make them yourself. Hope you love them. Thanks so much, Gina! 😊
Love the egg idea!! This WK I put scrambled eggs with add-ins in my donut sheet pan and baked them then made sandwiches out of the thin bagels!! Nothing hushed out of the middle!!
i do a similar breakfast but in the morning at home, I crack my egg in the mixture and cook it at work. Takes up less room in my lunch kit. Great prep Kristi
You must have read my mind! I was looking at the just crack an egg cups at Walmart. Ibotta is offering a cash back on them. I thought they seemed kind of high in points, so I didn’t get them. Now I can make my own…genius! Thank you!😊
You are so sweet, Tracy!! Pasta salads are almost year round in Florida! ;) We have them so much throughout the hot summers though - with some nice corn on the cob - YUM!!! 😋

SOMETIMES if I make a casserole or something, then I might have it two nights, but not often. But now my mother could eat the same thing all week long!
Oh my goodness I love how you prepped the scrambles. I’ve tried before with bags and mason jars and it just didn’t work. I have those containers at home and I am doing egg scrambles for breakfast next week!! Thank you so much!

Hi.. I tell you all the time that I love watching these meal preps. I really do. I love my silicone baking cups. I have made cornbread muffins and blueberry muffins in them in my airfryer. Not very healthy though, lol. How do you use yours?
Yes, you sure do, and I truly appreciate all your nice comments!! I've never even thought of making muffins in the air fryer!! I need to try that! YUM!! To be honest, I've only used the silicone cups as separators like I did in this video to put my blueberries in! LOL

Thanks for sharing your meal prep. Looks super easy. I've always wondered why anyone would buy those "Crack and egg". Have you ever heard of Intermittent Fasting? Gin Stepehens book 'Fast Feast Repeat' and her older one 'Delay Don't Deny' has changed my life. No calorie counting for me! God bless!
Thanks so much!! I used to buy the crack an egg things out of pure convenience or for weeks I don't have time to meal prep. But now that I have this option, these are easy enough to whip together. And yes, I have heard of intermittent fasting. I actually do a form of it because I usually don't eat until around 11 or so. But I just don't purposely do it because of my UC and having to listen to my hunger signals. I'll have to check into those books! Thanks so much!

Great idea to prep the breakfast scrambles, and you're getting lots of healthy vegetables. I don't love spinach raw, but it's nice in cooked dishes.

My daughter likes to make the breakfast bowls like a skillet scramble. That is, she doesn't microwave it.
YUM!! I like to do that on my days off - when I don't have to work in the office. And the best thing is, you can make it different each time! :)
