We made this last night and my husband was so happy! The chicken was so tasty, tender and juicy. I marinated in the fridge for about 1.5 hours. We had black beans and white basmati rice with dinner rolls. My son also loved it! Thank you for sharing your recipes!

I've noticed that you use olive oil very often. I am wondering why you don't use sunflower or safflower oil more? It seems these oils would be "more traditional" of Mexican recipes. (Maybe I have watched too many Uncle Roger videos--Does that man ever hate olive oil!!). I would like to know how you decide which oil to use for certain recipes.
